Make whipped Dalgona coffee with espresso powder. Learn ratios, whipping tips, fixes, and how to serve over hot or cold milk.
Trendy or not, this coffee is an indulgent way to start your morning. Espresso powder gives this recipe more kick, instead of using the traditional instant coffee mix.
Recipe by John S. in Chicago
Yield: 1 serving
Whip espresso powder, sugar, and hot water until stiff peaks form, then spoon over 8 oz milk hot or cold.
Use an electric mixer for fastest results; adjust coffee, sugar, or water to taste—classic ratio is 1:1:1 by volume.
If foam is weak or grainy, try finer powder, powdered sugar, a pinch of cream of tartar, or rewhip with an electric whisk.
Preparation Instructions:
Blend and whip sugar, espresso powder, and water together until stiff peaks form.
Plop desired amount over 8 oz of milk hot or cold.
More About This Recipe
Make sure to whip the coffee and sugar until it's fluffy and forms peaks, similar to making meringue. This makes the whipped coffee float on top of the milk.
Try garnishing with a dusting of cocoa powder or drizzle of caramel.
Frequently Asked Questions
What is Dalgona coffee?
Dalgona coffee is a whipped coffee topping made by beating coffee, sugar, and hot water until fluffy, then spooning it onto milk. This recipe uses espresso powder for a bolder flavor.
Why use espresso powder instead of instant coffee?
Espresso powder gives a stronger, richer coffee flavor. It can be slightly less soluble, so you may need to whisk a bit longer than with instant coffee.
What are the right proportions to use?
The classic ratio is equal parts coffee, sugar, and hot water by volume. The recipe here uses 2 tbsp espresso, 3 tbsp sugar, and 2 tbsp boiling water for a sweeter, punchy foam. Adjust to taste.
How do I get stiff peaks?
Use hot water to dissolve ingredients, then whisk with an electric mixer for 1 to 3 minutes. A hand whisk works but takes longer. A tiny pinch of cream of tartar or using powdered sugar helps stabilize peaks.
Can I serve it with cold or non-dairy milk?
Yes. Spoon the whipped coffee onto cold milk over ice or warm milk. Non-dairy milks work, but very thin plant milks may make the foam sink, so chill them first and pour gently.
How long will the whipped coffee last?
Store the whipped mixture in the fridge for up to 24 hours. It may lose volume. Rewhip briefly with a whisk or mixer before serving if it deflates.
Can I use sugar substitutes or make a vegan version?
Most liquid sugar substitutes will not whip the same. Powdered sugar or very fine granulated sugar works best. For a vegan foam without coffee powder, some people use whipped aquafaba, but the taste and texture differ from traditional Dalgona. |

**Marjo**
This is the best recipe for Dalgona coffee. What this recipe has over others is the espresso powder and whipping until stiff peaks form. The espresso powder just tastes better. I wonder if putting in a pinch of Spice House Garam Masala would be an interesting twist?
