| Boilerpipe Text | This is going to sound so cliché, but the first time I remember trying Swedish meatballs was at IKEA. I had never been to that iconic store before, and to get the full experience I ate at the food court. The meatballs were so yummy that I bought a bag of them in the frozen section. It was an easy and yummy supper to have on hand.
Sadly, the nearest IKEA to us is hours away. So I had to figure out a way to recreate them at home to get my Swedish meatball fix.
I’m going to admit from the get-go that my goal in developing this recipe was not to recreate the most authentic Swedish meatballs known to man. My goal was scrumptious Swedish meatballs that are easy enough for a weeknight meal.
The thought of standing over a hot, greasy stove frying multiple batches of meatballs scares me off on most nights. It’s not something I want to attempt with a small baby in my care. But a few years ago I discovered something awesome: you can bake meatballs! This was a game changer for me, and meant that we could enjoy Swedish meatballs more than a couple of times a year.
So here’s my recipe for Easy Baked Swedish Meatballs!
First of all, here’s what you’ll need for the meatballs: ground pork, ground beef, milk, eggs, breadcrumbs (I use
Panko breadcrumbs
), nutmeg, garlic powder, onion powder, pepper, and salt.
Start by lightly beating the eggs.
Put all of the ingredients in a large bowl and mix very well with your hands. You want to be thorough, but not over-mix it. Otherwise the meatballs can get tough.
Roll the meat mixture into 1 1/2-inch balls. You should get about 46 meatballs.
Bake in a 400°F (205°C) oven for 15–20 minutes, or until cooked through. You can test to see if they’re done by slicing a sacrificial meatball in half.
Meanwhile, it’s time to make the sauce! You’ll need butter, flour, salt, pepper, and milk.
You essentially
make a roux
by melting the butter, adding the flour, salt, and pepper, and cooking for 2 minutes. Then you gradually whisk in the milk and bring it to a boil and boil for one minute. It’s so easy!
Add the meatballs to the gravy.
You can garnish with parsley if you like.
I really like to serve my baked Swedish meatballs with lingonberry sauce or jam. It might sound weird, but think of it like cranberry sauce. It actually tastes quite similar, and you could substitute
cranberry sauce
if you can’t find lingonberry sauce.
I love to serve the meatballs and gravy over
mashed potatoes
. It’s pretty dreamy.
NOTES:
According to my research, a broth and cream-based gravy is more traditional. I tested out these Swedish meatballs with that alternative, and we preferred my regular milk-based sauce. So that’s what I included here.
I have seen people serve Swedish meatballs with noodles instead of mashed potatoes. That sounds lovely to me!

# Easy Baked Swedish Meatballs

- FOR THE MEATBALLS:
- **2** Large Eggs, Lightly Beaten
- **1/4** **cup** Milk
- **1** **lb.** Ground Beef
- **1** **lb.** Ground Pork
- **1** **cup** Panko Breadcrumbs
- **2** **tsp.** Unrefined Sea Salt
- **1** **tsp.** Freshly Ground Black Pepper
- **1** **tsp.** Onion Powder
- **1/2** **tsp.** Garlic Powder
- **1/4** **tsp.** Ground Nutmeg
- FOR THE GRAVY:
- **5** **Tbsp.** Salted Butter
- **5** **Tbsp.** All-purpose Flour
- **1** **1/2** **tsp.** Unrefined Sea Salt
- **1/2** **tsp.** Freshly Ground Black Pepper
- **4** **cups** Whole Milk
- FOR SERVING:
- Parsley, For Garnish (optional)
- Mashed Potatoes, For Serving
- Lingonberry Sauce, For Serving
## Directions
- For the meatballs:
Preheat oven to 400°F (205°C).
Place all of the ingredients for the meatballs in a large bowl. Using your hands, mix it all together thoroughly. Just make sure to not over-mix it or the meatballs could get tough.
Roll the meat into 1 1/2-inch balls and place them on a baking sheet, making sure they don't touch. You may need to use more than one pan. You should get about 46 meatballs.
Bake in preheated oven for 15–20 minutes, or until cooked through.
For the gravy:
Meanwhile, as the meatballs are baking, make the gravy. Melt the butter in a large pot over medium heat. Whisk in the flour, salt and pepper. Cook for 2 minutes, whisking frequently. Pour in 1 cup of milk while whisking, then pour in the remaining milk. Whisk until smooth. Cook, stirring frequently, until mixture thickens and comes to a boil. Boil and whisk for 1 minutes. Remove from heat.
Add meatballs and stir to coat in the gravy. Garnish with parsley if desired. Serve over mashed potatoes with lingonberry sauce off to the side.
