serve as occasional bites of sweet, soft allium flavor, while
minced garlic
permeates and perfumes the entirety of the sauce with stronger garlic notes.
One large garlic head should provide enough cloves for this dish (you’ll need 12 total). Many garlic chicken recipes call for garlic powder, but instead of going that route, we used minced garlic for a sharper garlic bite. You’re already working with lots of fresh garlic, so why not continue with
fresh cloves
and mince them?
Recipe Tips for Creamy Garlic Chicken
Look for chicken breasts that are about the same size (sometimes you’ll get one giant one and one shrimpy one in the same pack).
Cutting large breasts into cutlets also makes them a more manageable size for eating, and it makes them thinner so they cook more evenly. And you don’t have to pound them.
Refrigerate leftovers in an airtight container for 2 to 3 days.
Reheat single servings in a covered microwave-safe dish for 2 to 3 minutes.
We don't recommend freezing this; the cream sauce might separate when it thaws.
If your whole garlic cloves are particularly large, cut them in half so they’ll be sure to cook through.
You are intended to eat the whole garlic cloves; after cooking, they become softer in texture and flavor (similar to
roasted garlic

## Ingredients
- 2 boneless, skinless chicken breasts (about 1 1/2 lb.)
- 1 tsp. kosher salt, divided
- 3/4 tsp. black pepper, divided
- 2 Tbsp. olive oil
- 1/4 cup all-purpose flour
- 2 Tbsp. butter
- 10 garlic cloves, peeled and left whole
- 2 garlic cloves, minced
- 3/4 cup unsalted chicken stock
- 1 tsp. Italian seasoning
- 1 tsp. white wine vinegar
- 2/3 cup heavy cream
- Chopped fresh parsley (optional)
## Directions
1. Place chicken breasts on a cutting board. Working with 1 breast at a time, use a sharp knife to cut breast horizontally in half (parallel to cutting board) to create 4 chicken cutlets. Sprinkle chicken evenly with 1/2 teaspoon each salt and pepper.

2. Heat oil in a large skillet over medium-high. Meanwhile, dredge chicken cutlets in flour, shaking off excess.

Arrange chicken in pan; cook until browned and cooked through, 5 to 6 minutes on each side. Remove chicken from pan.

3. Add butter to pan and reduce heat to medium-low. Add whole garlic cloves to pan; cook until lightly browned, stirring occasionally, 4 to 5 minutes. Add minced garlic to pan; cook until minced garlic is barely golden, stirring constantly, 1 to 2 minutes.

Add chicken stock, scraping bottom of pan to loosen any browned bits. Increase heat to medium-high, and stir in Italian seasoning, vinegar, and remaining 1/4 teaspoon each salt and pepper. Boil until liquid is reduced by about half, 4 to 5 minutes.

| Readable Markdown | Each bite of creamy garlic chicken is savory and rich—and you'll be surprised that something so simple could be this good. The chicken remains tender and moist, as it has a bit of a protective crust from the light flour coating. The [whole garlic cloves](https://www.southernliving.com/what-is-a-clove-of-garlic-8716585) serve as occasional bites of sweet, soft allium flavor, while [minced garlic](https://www.southernliving.com/what-is-jarred-garlic-8726391) permeates and perfumes the entirety of the sauce with stronger garlic notes.
One large garlic head should provide enough cloves for this dish (you’ll need 12 total). Many garlic chicken recipes call for garlic powder, but instead of going that route, we used minced garlic for a sharper garlic bite. You’re already working with lots of fresh garlic, so why not continue with [fresh cloves](https://www.southernliving.com/garlic-recipes-7481760) and mince them?
## Recipe Tips for Creamy Garlic Chicken
- Look for chicken breasts that are about the same size (sometimes you’ll get one giant one and one shrimpy one in the same pack).
- Cutting large breasts into cutlets also makes them a more manageable size for eating, and it makes them thinner so they cook more evenly. And you don’t have to pound them.
- Refrigerate leftovers in an airtight container for 2 to 3 days.
- Reheat single servings in a covered microwave-safe dish for 2 to 3 minutes.
- We don't recommend freezing this; the cream sauce might separate when it thaws.
- If your whole garlic cloves are particularly large, cut them in half so they’ll be sure to cook through.
- You are intended to eat the whole garlic cloves; after cooking, they become softer in texture and flavor (similar to [roasted garlic](https://www.southernliving.com/roasted-garlic-8742729)’s mellowness).
## Substitutions for Creamy Garlic Chicken
- If you’d like a thicker sauce, stir in a slurry of 1 tablespoon flour whisked with 2 tablespoons water or chicken broth; boil for a couple of minutes, until the sauce thickens.
- For a richer dish, you can use [boneless, skinless chicken thighs](https://www.southernliving.com/boneless-chicken-thigh-recipes-6531514) instead of breasts.
- Serve with something that will ensure none of the sauce goes to waste. Mashed potatoes, rice, couscous, or quinoa would be great.
