Key Takeaways
The best way to prevent brown spots on apple slices is by soaking them in lemon juice, lemon-lime soda, water with honey, or a saltwater bath. Our preferred method: the saltwater bath.
What causes apple slices to turn brown? It's when an enzyme called polyphenol oxidase (PPO), found within the cells of an apple, interacts with oxygen.
A final tip for keeping your apple slices fresh: keep them in an air-tight container inside your refrigerator.
Have you ever
sliced an apple
and noticed it started to turn brown before you even had a chance to enjoy it? While the browning is just a chemical reaction to oxygen exposure and won’t alter the taste or quality of an apple, it can be extremely frustrating when trying to prepare a dish or snack. The good news is, there are countless ways to prevent apples from turning brown, and they’re all very simple methods.
How to Keep Apples From Turning Brown
Apple season
is in full effect. So, whether you’re making a
homemade apple pie
, meal prepping some fruits for the week, or packing your kid’s lunchbox, there’s a few different ways to keep your apples from turning brown. Since the browning occurs from oxidation, foods containing acid will prevent the enzyme from breaking down, which will help prevent browning. You can soak apple slices in
lemon juice
, lemon-lime soda, or water with honey, but our favorite method is a saltwater bath. This easy tactic requires minimal time and clean up, and keeps your apple slices as bright and fresh as possible.Â
What You'll Need
Equipment / Tools
Kosher salt
Mixing bowl
Colander or strainer
Materials
Apples
Instructions
Prep and Mix the Saltwater
Pour half a teaspoon of
kosher salt
and a cup of room temperature water into a bowl. Mix the salt and water for a minute or two until the salt has dissolved.
Soak Apple Slices in Saltwater
Place the sliced apples into the bowl of saltwater and allow them to soak for up to 10 minutes.
Strain the Apple Slices and Rinse
Pour the saltwater and apple slices into a strainer or colander, and run water over the apple slices to rinse off the saltwater. Your apple slices will stay fresh (and not brown!) for up to three days when stored in an
airtight food storage container
in the refrigerator.
Why Do Apples Turn Brown When Cut?Â
Within just a few minutes of slicing an apple, it will begin to turn brown due to oxidation, which simply means the fruit was exposed to oxygen. An enzyme called polyphenol oxidase (PPO) is found deep in the cells of an apple, and when it interacts with oxygen, it causes a reaction within the apple’s tissues. This is what causes the brownish color to form on the flesh portion of the apple once it’s sliced.
Using the saltwater method outlined above is the best way to keep apple slices from turning brown, but here are a few other tips to keep in mind:
If you’re not planning on eating or cooking with your apple slices directly after cutting them, store them in an airtight container in the fridge. This will prevent more oxygen from seeping in, and will keep the slices fresh for up to three days.
Cut larger apple slices so there’s less surface area that will be exposed to oxygen.
If you need to keep apple slices fresh for the short-term, like while you’re preparing other ingredients for a recipe, place the slices in a bowl of cold water until you’re ready to use them. |

### Key Takeaways
- The best way to prevent brown spots on apple slices is by soaking them in lemon juice, lemon-lime soda, water with honey, or a saltwater bath. Our preferred method: the saltwater bath.
- What causes apple slices to turn brown? It's when an enzyme called polyphenol oxidase (PPO), found within the cells of an apple, interacts with oxygen.
- A final tip for keeping your apple slices fresh: keep them in an air-tight container inside your refrigerator.
Have you ever [sliced an apple](https://www.realsimple.com/food-recipes/cooking-tips-techniques/preparation/how-core-apple) and noticed it started to turn brown before you even had a chance to enjoy it? While the browning is just a chemical reaction to oxygen exposure and won’t alter the taste or quality of an apple, it can be extremely frustrating when trying to prepare a dish or snack. The good news is, there are countless ways to prevent apples from turning brown, and they’re all very simple methods.
## How to Keep Apples From Turning Brown
[Apple season](https://www.realsimple.com/apple-picking-tips-from-orchardists-8711463) is in full effect. So, whether you’re making a [homemade apple pie](https://www.realsimple.com/apple-pie-upgrades-7973689), meal prepping some fruits for the week, or packing your kid’s lunchbox, there’s a few different ways to keep your apples from turning brown. Since the browning occurs from oxidation, foods containing acid will prevent the enzyme from breaking down, which will help prevent browning. You can soak apple slices in [lemon juice](https://www.realsimple.com/benefits-of-lemon-8639535), lemon-lime soda, or water with honey, but our favorite method is a saltwater bath. This easy tactic requires minimal time and clean up, and keeps your apple slices as bright and fresh as possible.
## What You'll Need
### Equipment / Tools
- Kosher salt
- Mixing bowl
- Colander or strainer
### Materials
- Apples
## Instructions
1. ### Prep and Mix the Saltwater
Pour half a teaspoon of [kosher salt](https://www.realsimple.com/kosher-salt-vs-sea-salt-8422984) and a cup of room temperature water into a bowl. Mix the salt and water for a minute or two until the salt has dissolved.
2. ### Soak Apple Slices in Saltwater
Place the sliced apples into the bowl of saltwater and allow them to soak for up to 10 minutes.
3. ### Strain the Apple Slices and Rinse
Pour the saltwater and apple slices into a strainer or colander, and run water over the apple slices to rinse off the saltwater. Your apple slices will stay fresh (and not brown!) for up to three days when stored in an [airtight food storage container](https://www.realsimple.com/food-recipes/shopping-storing/food/best-food-storage-containers) in the refrigerator.
## Why Do Apples Turn Brown When Cut?
Within just a few minutes of slicing an apple, it will begin to turn brown due to oxidation, which simply means the fruit was exposed to oxygen. An enzyme called polyphenol oxidase (PPO) is found deep in the cells of an apple, and when it interacts with oxygen, it causes a reaction within the apple’s tissues. This is what causes the brownish color to form on the flesh portion of the apple once it’s sliced.
Using the saltwater method outlined above is the best way to keep apple slices from turning brown, but here are a few other tips to keep in mind:
- If you’re not planning on eating or cooking with your apple slices directly after cutting them, store them in an airtight container in the fridge. This will prevent more oxygen from seeping in, and will keep the slices fresh for up to three days.
- Cut larger apple slices so there’s less surface area that will be exposed to oxygen.
- If you need to keep apple slices fresh for the short-term, like while you’re preparing other ingredients for a recipe, place the slices in a bowl of cold water until you’re ready to use them. |
