If you've ever doubted
baking soda’s powers
, look to the science. One study that evaluated baking soda in food waste containers found that the containers with baking soda had 70 percent lower odor concentration than the controls.
“Other research has explored its use in food packaging, including fermented foods like kimchi, and observed measurable reductions in odor intensity when baking soda was incorporated,” explains Dani Dominguez, MS, RDN, a registered dietitian nutritionist.
OK, so studies prove that baking soda
is
an effective deodorizer—but
why
is that? "Baking soda, also known as sodium bicarbonate, neutralizes odors through acid-base chemistry," says Dominguez. "This crystalline salt is amphoteric, meaning it can react with both acidic and basic compounds."
This is where the chemistry comes into play: "Because many unpleasant odors are caused by volatile molecules that are either acidic or basic in nature, baking soda can chemically interact with them to neutralize them," says Dominguez. "In doing so, it can reduce their volatility, making the smell less noticeable."
The Best Way to Use Baking Soda in Your Fridge
That trusty box of baking soda in your fridge is effective—but the placement of the baking soda and the amount relative to the size of your refrigerator’s interior also matter for best results. “We might be tempted to shove an open box to the back of the shelf and call it a day, but for baking soda to really work, it needs airflow,” says cleaning expert Trish Duarte. “A mostly closed box is like a guard stuck in a closet. It can’t see or stop an odor-causing thief.”
Duarte recommends pouring a cup of baking soda into a shallow, wide container. If you prefer to keep the powder in the box, open the top fully and give it a gentle shake once a week to bring fresh powder to the surface. “Replace the whole box every thirty days,” she adds. “Baking soda can only handle so much. After a few weeks, it starts to lose its odor-fighting abilities.”Â
For stronger smells, Duarte suggests placing a small bowl of activated charcoal next to the baking soda. “Charcoal is more porous than baking soda and traps odor molecules like a magnet, grabbing what baking soda can’t,” she says.
Remember that baking soda isn't a miracle deodorizer for every household surface. “While it’s tempting to sprinkle baking soda everywhere—including carpets, mattresses, and upholstery—it’s actually better to avoid that because it can work its way deep into fibers and become nearly impossible to remove,” Duarte says. “Over time, as you walk or sit, they act like tiny abrasives, causing friction that can wear down the material.”
Keeping Your Fridge Odor-Free
Using fresh baking soda in the fridge is a great way to deodorize, but it won’t deter odors or kill the source, like a sticky spill or old food. “For a

, start fresh,” says Duarte. “Start with warm, soapy water to remove spills and residue. Use a

if you need extra help with buildup. Let it dry completely before placing your baking soda to maintain freshness.”

and tossing spoiled ingredients. “Managing moisture levels is also important, as excess humidity can contribute to mold or bacterial growth that produces odors,” Dominguez adds. “Baking soda serves as a supportive tool rather than a substitute for routine maintenance. |

## Why Baking Soda Works as a Fridge Deodorizer
If you've ever doubted [baking soda’s powers](https://www.marthastewart.com/how-to-use-baking-soda-in-the-garden-11732918), look to the science. One study that evaluated baking soda in food waste containers found that the containers with baking soda had 70 percent lower odor concentration than the controls.
“Other research has explored its use in food packaging, including fermented foods like kimchi, and observed measurable reductions in odor intensity when baking soda was incorporated,” explains Dani Dominguez, MS, RDN, a registered dietitian nutritionist.
OK, so studies prove that baking soda *is* an effective deodorizer—but *why* is that? "Baking soda, also known as sodium bicarbonate, neutralizes odors through acid-base chemistry," says Dominguez. "This crystalline salt is amphoteric, meaning it can react with both acidic and basic compounds."
This is where the chemistry comes into play: "Because many unpleasant odors are caused by volatile molecules that are either acidic or basic in nature, baking soda can chemically interact with them to neutralize them," says Dominguez. "In doing so, it can reduce their volatility, making the smell less noticeable."
## The Best Way to Use Baking Soda in Your Fridge
That trusty box of baking soda in your fridge is effective—but the placement of the baking soda and the amount relative to the size of your refrigerator’s interior also matter for best results. “We might be tempted to shove an open box to the back of the shelf and call it a day, but for baking soda to really work, it needs airflow,” says cleaning expert Trish Duarte. “A mostly closed box is like a guard stuck in a closet. It can’t see or stop an odor-causing thief.”
Duarte recommends pouring a cup of baking soda into a shallow, wide container. If you prefer to keep the powder in the box, open the top fully and give it a gentle shake once a week to bring fresh powder to the surface. “Replace the whole box every thirty days,” she adds. “Baking soda can only handle so much. After a few weeks, it starts to lose its odor-fighting abilities.”
For stronger smells, Duarte suggests placing a small bowl of activated charcoal next to the baking soda. “Charcoal is more porous than baking soda and traps odor molecules like a magnet, grabbing what baking soda can’t,” she says.
Remember that baking soda isn't a miracle deodorizer for every household surface. “While it’s tempting to sprinkle baking soda everywhere—including carpets, mattresses, and upholstery—it’s actually better to avoid that because it can work its way deep into fibers and become nearly impossible to remove,” Duarte says. “Over time, as you walk or sit, they act like tiny abrasives, causing friction that can wear down the material.”
## Keeping Your Fridge Odor-Free
Using fresh baking soda in the fridge is a great way to deodorize, but it won’t deter odors or kill the source, like a sticky spill or old food. “For a [clean and healthy fridge](https://www.marthastewart.com/how-to-clean-refrigerator-7964504), start fresh,” says Duarte. “Start with warm, soapy water to remove spills and residue. Use a [diluted vinegar solution](https://www.marthastewart.com/vinegar-uses-8350561) if you need extra help with buildup. Let it dry completely before placing your baking soda to maintain freshness.”
Keeping the fridge odor-free requires regular cleaning, [keeping food in sealed containers,](https://www.marthastewart.com/8382184/food-storage-mistakes) and tossing spoiled ingredients. “Managing moisture levels is also important, as excess humidity can contribute to mold or bacterial growth that produces odors,” Dominguez adds. “Baking soda serves as a supportive tool rather than a substitute for routine maintenance. |
