Hello Zaars and Zaarinas! Thank all of you who tried my 'memory' recipes and left such nice reviews and for taking such lovely pictures. I do appreciate your comments. My pet peeves about cooking are recipe reviews where the reviewer says, "I made the recipe exactly as written EXCEPT yada yada yada" and I don't like suggestive names or titles such as, "Better Than Sex". I don't know why anyone would eat anything that is 'sinful' or 'decadent' since decadent is described as being decaying. Also, PAP-RI-KA only has 3 syllables. VINAIGRETTE is pronounced vin-a-grette, not vinager-ette. It's mas-car-pone not mars-ca-pone. And I don't like cutesy adult baby talk,,, or metro chic names like delish, nutrish, yummo, sammy, BAM! Oh well, I make as many, or more, faux pas as the next guy especially in ASL! Make sure your eggs are at least 5 days old so the shells remove easily. Hope you try this! You should start timing the eggs from the moment the water first boils. Soft-boiled (soft whites, soft yolks): Large size: 3 minutes 20 seconds. Medium size: 3 minutes. Small size: 2 minutes 40 seconds. Medium-boiled (hard whites, soft yolks): Large size: 4 minutes 15 seconds. Medium size: 3 minutes 50 seconds. Small size: 3 minutes 20 seconds. Hard-boiled (hard whites, hard yolks): Large size: 10 minutes. Medium size: 8 minutes. Small size: 7 minutes. TIPS A little salt in the water will keep eggs from cracking when boiling. I have laying chickens and it's extremely difficult to peel the fresh eggs without tearing the egg to pieces. Using this method, the shells literally slipped right off. A few were still a tiny bit hard to peel but no where near as hard as with other methods. And with this method NONE of the eggs got destroyed torn up, even the ones that were a little harder to peel.
