Cooking times vary." save [Download](https://www.food.com/recipe/beef-stroganoff-51067/as-image "Download") Print Share I Made This   photo by ktenille  Ready In: 50mins Ingredients: 11 Serves: 4 Nutrition information ## ingredients Units: US - 1 1 [top round steaks](https://www.food.com/about/beef-round-cuts-818) (simmer about 1 hour and test meat for tenderness) or 1 chuck steak (simmer about 1 hour and test meat for tenderness) - 2 tablespoons [unsalted butter](https://www.food.com/about/butter-141) or 2 tablespoons [margarine](https://www.food.com/about/margarine-421) - 1 lb [fresh mushrooms](https://www.food.com/about/mushroom-110), sliced or 2 cans [mushrooms](https://www.food.com/about/mushroom-110) - 1 medium [onion](https://www.food.com/about/onion-148), minced - 1 can [beef broth](https://www.food.com/about/broth-154) - 2 tablespoons [catsup](https://www.food.com/about/ketchup-156) - 1 1⁄2 teaspoons [garlic](https://www.food.com/about/garlic-165), minced - 1 teaspoon [salt](https://www.food.com/about/salt-359) (optional) - 3 tablespoons [flour](https://www.food.com/about/flour-64) - 1 cup [sour cream](https://www.food.com/about/sour-cream-147) - 1 package cooked wide egg noodles Advertisement ## directions - cut meat across the grain into 1/2" strips, about 1" long. - melt butter in large heavy skillet. - Add mushrooms (if using fresh- if canned do not add) and onion. - Stir until onion is tender, then remove from skillet and place on side. - In same skillet, cook meat until light brown. - measure 1/3 cup of beef broth and place on side. - Stir in remaining broth, catsup, garlic and salt. - Cover and simmer- time depends on cut of beef- see above. - Blend reserved broth and flour to make paste. - Stir into meat mixture. - Add mushrooms and onion. - Heat to boiling, stirring for about 1 minute. - Let mixture sit to cool down. - Slowly stir in sour cream and reheat over medium low flame. - Serve over cooked hot noodles. ## Questions & Replies  Sign In to Ask a Question Got a question? Made it last night with rump steak and simmered it for about 1/2 an hour and it was sooo tender. I also used 2 stock cubes and 2 cups of hot water instead of canned broth and I also substituted the catsup for tomato sauce and added a tsp of sugar and a bit of vinegar (as per zaar substitutes for catsup) as I don't think they sell it in Australia.
