This Beef Stroganoff Hamburger Helper recipe is so easy to make and is based off my recipe for HomemadeĀ  Hamburger Helper , with a few tweaks, and is on the table in 30 minutes or less. Perfect for busy weeknights. It’s creamy, shroomy and delicious and anĀ easy recipeĀ theĀ whole familyĀ will love. Some otherĀ easy ground beef recipesĀ I love are:Ā  Tater Tot Casserole ,Ā  Classic Meatballs ,Ā  Gochujang Sloppy Joes , or my super simpleĀ  Cheesy Skillet Lasagna . QUICKLY JUMP TO: If you want a simple weeknight dinner idea, this recipe is for you. No cans ofĀ cream of mushroom soupĀ were harmed in the making of this recipe. Serve it with a simple side dish ofĀ  Garlic Parmesan Roasted Broccoli Ā andĀ  No Knead Bread . Heather’s Notes Better than the box – This homemade Beef Stroganoff Hamburger Helper has all the nostalgia of the original but with fresher, healthier ingredients. One-pan dinner – Everything cooks in one pot for easy cleanup and minimal fuss. Quick and satisfying – From start to finish, dinner is on the table in about 30 minutes. Kid-approved – Creamy, savory, and mild enough for even picky eaters. Customizable – Swap ground beef for turkey, chicken, or plant-based crumbles for a lighter twist. Ingredients You’ll Need Fresh Mushrooms  – fresh white or cremini mushrooms add earthiness and depth of flavor. Olive oil  – or you can useĀ vegetable oil Ground beef  – Lean ground beef works best to keep it hearty but not overly oily. Wide egg noodles or mafalda pasta  – you can use any type of pasta for this dish. Egg noodles or mafalda are the classic pasta for stroganoff. Milk –  the higher the fat, the creamier the sauce Beef stockĀ orĀ beef broth  – Creates a rich base for the sauce. Corn starchĀ or All Purpose flourĀ  – to thicken the sauce Salt & Black pepperĀ  – to taste Paprika  – Gives a warm, smoky note Sour creamĀ  – Adds creaminess and tang. Find the printable recipe card with exact measurements and step-by-step instructions below. Substitutions or Variations for Flavor Change Flour: Ā use wholeĀ wheat flourĀ for theĀ corn starch. Add Veggies: Ā omit mushrooms and add other veggies like mincedĀ garlic cloves, fresh peas, asparagus, chopped broccoli, or choppedĀ green beans. Change the Meat:Ā  ground lamb, ground chicken,Ā ground turkey, or ground game can be used instead of ground beef. Add Greek Yogurt: Ā substitute Greek yogurt for sour cream or vegan sour cream. Swap Spices: Ā add chopped parsley for color. Swap regular paprika for smoked paprika,Ā  Hungarian paprika , or Spanish paprika. How to makeĀ Homemade Hamburger Helper Beef StroganoffĀ from scratch Heat aĀ large skilletĀ overĀ medium-high heat. Add theĀ olive oilĀ and brown the mushrooms. Remove to a bowl and set aside. Brown ground beefĀ in the sameĀ deep skillet. Discard all but 1 teaspoon of fat.Ā  Bring back toĀ medium heatĀ and add theĀ uncooked egg noodles, milk,Ā beef stock, mushrooms, cornstarch, salt, pepper and paprika. Stir to combine and cover. Lower the heat to medium-low and allow to simmer for 10-12 minutes, or until the noodles are cooked through. Add the sour cream and simmer for 5 more minutes until you have aĀ creamy sauce. Serve immediately. Tips for Storing Refrigerator – Store leftovers in an airtight container in the fridge for up to 3 days. Freezer – For best results, freeze the sauce and beef mixture without noodles. Cook fresh noodles when reheating. Reheating – Reheat gently on the stovetop over low heat, adding a splash of beef broth or milk to restore creaminess. Avoid overcooking noodles – If storing for later, slightly undercook the noodles so they don’t get mushy when reheated. I did add an extra 1/2 cup of broth since I used Amish egg noodles. A very good call on my part as the thicker noodles sucked up almost all the liquid. 10/10 will be making again!!\!![5 stars](https://www.farmgirlgourmet.com/wp-content/plugins/wp-recipe-maker/assets/icons/rating/stars-alt-5.svg) [Reply](https://www.farmgirlgourmet.com/beef-stroganoff-hamburger-helper/#comment-13883) 1. ![HEATHER SCHOLTEN](https://www.farmgirlgourmet.com/wp-content/uploads/2024/01/Heather-Scholten-Gravatar-70x70.jpg) **[HEATHER SCHOLTEN](https://farmgirlgourmet.com/about/)** says: [Aug 26, 2025 at 10:59 am](https://www.farmgirlgourmet.com/beef-stroganoff-hamburger-helper/#comment-13887) So glad you liked it Heather! I was so excited to see this recipe and with the Better than Beef Bouillon Base so I wouldn’t have to adapt the recipe to use this instead of regular bouillon which I tend to not have on hand. As an adult, I discovered I was allergic to dairy so I stopped eating all kinds of tasty things until I learned to be brave and try substituting. I have been using the recipe for a while now and I just wanted to let everyone know that it is just as wonderful made dairy free. I have a soft spot for HH beef stroganoff but my husband abhors anything that comes from a box. This was spot on in terms of flavor for me and sans box made it husband friendly. My 2.5 yr old also polished her bowl. The only thing I did differently was to add a full 14.5oz can of beef broth since I used 12 oz of noodles and not 8 (that’s what I had on hand). I did up the spices too to compensate for the additional liquid. This is definitely going into the recipe rotation – thanks for sharing\! Tastes almost identical to HH. I love that it only has about a third of the sodium that HH does and that is adjustable, depending on if you use stock, water or bouillon. I used Campbell’s ā€œSimply Stockā€ beef stock. My husband loved this too and he isn’t a big fan of HH. I am the salt box junkie in the house. This was no more difficult to put together than a box of HH. I put everything together in a big measuring cup (I liquified the cornstarch before adding it) then blended it with my hand mixer for a second to unclump the paprika and pepper. Cook fresh noodles when reheating. - **Reheating** – Reheat gently on the stovetop over low heat, adding a splash of beef broth or milk to restore creaminess. - **Avoid overcooking noodles** – If storing for later, slightly undercook the noodles so they don’t get mushy when reheated. ## FAQs **Can I use a different type of meat than ground beef in Beef Stroganoff Hamburger Helper?** Yes, you can!
