2 事先去除食材多余的油脂和杂味
是否先去除肉和鱼的多余油脂及杂味很重要。油脂使人不易尝到味道,杂味则需要重一点的调味才能盖过,因此就得使用更多调味料。
只要浸泡在热水中,或是浇过醋水或盐水,去除多余的油脂和杂味,就能将调味料用量降到最低,减少整体的盐分。

3 使用少量煮汁,减少全体的盐分
使用少量煮汁炖煮时,要将煮汁一边浇在所有食材上一边炖煮,为了让所有食材都浸泡在煮汁中,可用沾湿的纸巾(不织布)做成落盖(注:直接放在食材上的小锅盖,日式料理常用,帮助食物汤汁少也能顺利入味,并避免水分快速蒸发。
另一方面,由于水分能适度蒸发,食物不容易软烂),就可以轻松完美地炖煮了。此外,控制食材的水分也是重点。
先炒过食材,收干水分后再加入煮汁,等煮汁再次收干后,美味自然也会聚集于食材上整体入味。
2款减盐版经典食谱

经典美味家常菜减盐食谱~“马铃薯炖肉”,煮物秘诀是加入煮汁之前,要先将食材彻底炒过。(山岳文化提供)

2. 在锅中煮大量热水,将步骤1 白萝卜叶以外的食材放入煮2分钟后,冷却并沥干水分(Point)。撒上1/4小匙的盐。
3. 鸡肉除去多余油脂后切成8等分,将1大匙面粉薄薄撒在所有鸡肉上。
4. 倒入2小匙沙拉油到平底锅中,并以中火加热,将步骤3的食材排在锅子中,两面各煎2分钟。加入步骤2的食材后稍微炒一下,再加入混合好的食材A。
5. 以中火煮滚后,放上以沾湿纸巾(不织布)做成的落盖,再盖上锅盖,以小火炖煮15分钟(中途要将锅盖及落盖拿下,上下稍微拌匀)。 |

### 2 事先去除食材多余的油脂和杂味
是否先去除肉和鱼的多余油脂及杂味很重要。油脂使人不易尝到味道,杂味则需要重一点的调味才能盖过,因此就得使用更多调味料。**只要浸泡在热水中,或是浇过醋水或盐水,去除多余的油脂和杂味,就能将调味料用量降到最低,减少整体的盐分。**

### 3 使用少量煮汁,减少全体的盐分
使用少量煮汁炖煮时,要将煮汁一边浇在所有食材上一边炖煮,为了让所有食材都浸泡在煮汁中,可用沾湿的纸巾(不织布)做成落盖(注:直接放在食材上的小锅盖,日式料理常用,帮助食物汤汁少也能顺利入味,并避免水分快速蒸发。
另一方面,由于水分能适度蒸发,食物不容易软烂),就可以轻松完美地炖煮了。此外,控制食材的水分也是重点。**先炒过食材,收干水分后再加入煮汁,等煮汁再次收干后,美味自然也会聚集于食材上整体入味。**

2. 在锅中煮大量热水,将步骤1 白萝卜叶以外的食材放入煮2分钟后,冷却并沥干水分(Point)。撒上1/4小匙的盐。
3. 鸡肉除去多余油脂后切成8等分,将1大匙面粉薄薄撒在所有鸡肉上。
4. 倒入2小匙沙拉油到平底锅中,并以中火加热,将步骤3的食材排在锅子中,两面各煎2分钟。加入步骤2的食材后稍微炒一下,再加入混合好的食材A。
5. 以中火煮滚后,放上以沾湿纸巾(不织布)做成的落盖,再盖上锅盖,以小火炖煮15分钟(中途要将锅盖及落盖拿下,上下稍微拌匀)。 |
