Original recipe (1X) yields 4 servings

milk

dried bread crumbs

skinless, boneless chicken breasts

tablespoons
butter

cup
chicken broth

cup
heavy whipping cream
1
(4 ounce) jar
sliced pimento peppers, drained
½
cup
grated Parmesan cheese
¼
cup
chopped fresh basil
⅛
teaspoon
ground black pepper
Directions
Place milk and bread crumbs in separate, shallow bowls. In skillet, heat butter or margarine to medium heat. Dip chicken in milk, then coat with crumbs. Cook in butter or margarine, on both sides, until juices run clear (about 10 minutes). Remove and keep warm.
Add broth to skillet. Bring to a boil over medium heat, and stir to loosen browned bits from pan. Stir in cream and pimentos; boil and stir for 1 minute. Reduce heat.
Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. Pour mixture over chicken and serve!

OK with tweaks
Might try again
I made this as written, except that I doubled the black pepper. I thought this was pretty good, but with the addition of the sauce, the breading didn’t really stay crisp on the chicken. The addition of an egg to the breading process likely would’ve helped it stay, so would do that next time. Also, 1/4 c breadcrumbs was barely enough to cover the chicken breasts. On the positive side, the chicken was juicy, not dry, and the dish was flavorful from the basil, peppers, and butter. If I made this again, in addition to the egg, I would pound out the chicken to thin it out and maybe double and basil and add mushrooms for even more flavor. I also might make with chicken thighs.

We liked this! I did automatically add salt and garlic powder to both the chicken and the sauce, as I knew I would need that for my taste preferences. I also didn’t have enough fresh basil so added some dried basil to the sauce as well. I love how quick and easy it was.

Ingredients

Original recipe (1X) yields 4 servings
- ¼ cup milk
- ¼ cup dried bread crumbs
- 4 skinless, boneless chicken breasts
- 3 tablespoons butter
- ½ cup chicken broth
- 1 cup heavy whipping cream
- 1 (4 ounce) jar sliced pimento peppers, drained
- ½ cup grated Parmesan cheese
- ¼ cup chopped fresh basil
- ⅛ teaspoon ground black pepper
## Directions
1. Place milk and bread crumbs in separate, shallow bowls. In skillet, heat butter or margarine to medium heat. Dip chicken in milk, then coat with crumbs. Cook in butter or margarine, on both sides, until juices run clear (about 10 minutes). Remove and keep warm.
2. Add broth to skillet. Bring to a boil over medium heat, and stir to loosen browned bits from pan. Stir in cream and pimentos; boil and stir for 1 minute. Reduce heat.
3. Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. Pour mixture over chicken and serve\!
