There's something a little bit suspicious about the origin story of this "to die for" pasta's name. Sure, a customer jokingly asking the chef if they're trying to "kill them" with this intensely flavored Spaghetti all'Assassina is sort of believable, but I've always felt like there was much more to the story. Hey, can we get a few of these true crime podcasters on the case?
Anyway, regardless of the real story (possibly involving the Medicis, and probably also the Opus Dei), this spicy, partially pan-fried spaghetti dish is as unusual as it is incredibly delicious. As the head assassin, you get to decided exactly how spicy and charred this gets, but as I said in the video, the sweetness and acidity of the caramelized tomato sauce balances the heat from the chili flakes, so don't worry about using a heavy hand.
The cheater method for this recipe involves boiling the spaghetti for four or five minutes first, then draining, before pan-frying and saucing as shown. This may be a little more user-friendly method, but you just won't get the same, very unique texture. Having said that, if you have a large non-stick, or very well seasoned cast iron pan, this really isn't hard to pull off. Either way, I really hope you give this a try soon. Enjoy! |

Caramelized tomato sauce makes this a wonderfully savory dish. The reduction of the tomato broth brings out the sweetness of the tomatoes which balances well with the spiciness of the chili flakes.

Tomato Broth:
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 3 cups tomato puree
- 3 cups water
- 1 teaspoon salt, or to taste
Assassin's Spaghetti:
- ÂĽ cup olive oil
- 2 teaspoons red chili flakes, or to taste
- 6 ounces dry spaghetti
- salt to taste
- 1 tablespoon finely chopped parsley, for garnish
## Directions
1. Gather all ingredients.

2. Heat olive oil in a pot over medium heat. Add garlic and sizzle until it starts to turn golden and fragrant, about 1 minute. Stir in tomato puree, water, and salt. Bring to a simmer on medium-high. Once simmering, reduce to low heat and keep warm.

3. Pour olive oil into a large non-stick skillet over medium-high heat, season with chili flakes and heat until chili flakes start to sizzle, for 1 minute. Add raw spaghetti and toss until well coated with chili oil.

4. Pour in about 3 cups of tomato broth and, using tongs, move pasta from side to side to evenly distribute tomato broth. Cook, occasionally moving pasta from side to side with tongs, all facing the same direction, until most of the broth has been absorbed or evaporated, and the spaghetti starts frying in the pan.

5. Turn spaghetti over with tongs, and evenly arrange in the pan. Keep cooking until the pasta starts to brown, and even lightly chars.

6. Add about 2 more cups of tomato broth, and repeat the process. Continue cooking until the spaghetti is as charred as you like , and cooked to your desired doneness. More broth can be added at the end of the process for a saucier version, as shown in the video, or it can be served relatively dry.

Thanks Chef John,We were looking for something new and interesting when we found this recipe of yours. We were quite skeptical about not boiling the pasta. However we said that you have not ever let us down so we went for it. Like you said the spaghetti crunchy bits were just like the edges of a Lasagna but much more flavorful. The heat was perfect. The next day we took the leftovers and made two piles in the skillet. We made a little WELL in the top and broke a RAW EGG in to the WELL. We then covered it for 5 min until the EGG was set. WOW THAT WAS GREAT as well. We again will call you the BABE RUTH of the culinary arts. Because you HIT ANOTHER ONE out of the BALLPARK.ALL HAIL CHEF JOHN. We are looking forward to our next experience with you. Thanks again.

This is an excellent recipe! My sons groaned when I said I was making spaghetti, then proceeded to devour this dish when I put it in front of them. I made it just as Chef John instructed with a couple of small tweaks. 1) I used canned tomato puree, so added a pinch of sugar to help mitigate any metallic flavor, and 2) I sauteed some shrimp in olive oil with a bit of the reserved tomato broth to give the dish some added protein. It was perhaps a little too spicy for my wife, but apparently was tasty enough for her to push through. I will definitely be making this again.

We LOVED this!!!We've made it twice, once with gluten free spaghetti brown rice noodles, and once with typical spaghetti noodles. I'm very surprised to report that we liked it slightly better with the rice noodles. They crisped up so easily and nicely and had (dare I say it) such a lovely texture. First time in all of time that gluten free wins!As per the options in the notes, we used jarred pasta marinara instead of tomato sauce/paste. It was so lovely. Otherwise, every detail was made according to the recipe, from sizzling the fresh garlic in oil, to browning the noodles before turning and adding more sauce.As noted by other reviewers, don't be afraid to char these little guys. The browned bits are the best part. Every member of my family loved this dish. We'll definitely be making it again!Also, per the video, you don't need cheese. I know, it seems counterintuitive, but there's so much going on "flavor-wise" that adding cheese would be a mistake, in my opinion.

In a word ... intense! A unique eating experience that I will definitely make again. The way the charming and repeated saucing concentrates both the heat and tomato sauce is fantastic. I followed the recipe exactly and served it "dry".

This recipe turned out lovely. It's very spicy (two teaspoons of chili flakes!) but worth it. The reduction of the sauce and the frying of the spaghetti gave it such a delicious, even rich texture; it's hard to describe because I've never had this texture of pasta before. You really do have to burn it, and I will be less timid about having to char it the next time I make this (maybe tomorrow!). The crispy bits really were the best, but the rest wasn't a slouch. Fantastic recipe and I always appreciate Chef John's videos.The only thing I did differently out of necessity was use a can of tomato paste plus generous amounts of water to make my base tomato puree before adding the rest of the water called for in the recipe

There's something a little bit suspicious about the origin story of this "to die for" pasta's name. Sure, a customer jokingly asking the chef if they're trying to "kill them" with this intensely flavored Spaghetti all'Assassina is sort of believable, but I've always felt like there was much more to the story. Hey, can we get a few of these true crime podcasters on the case?
Anyway, regardless of the real story (possibly involving the Medicis, and probably also the Opus Dei), this spicy, partially pan-fried spaghetti dish is as unusual as it is incredibly delicious. As the head assassin, you get to decided exactly how spicy and charred this gets, but as I said in the video, the sweetness and acidity of the caramelized tomato sauce balances the heat from the chili flakes, so don't worry about using a heavy hand.
The cheater method for this recipe involves boiling the spaghetti for four or five minutes first, then draining, before pan-frying and saucing as shown. This may be a little more user-friendly method, but you just won't get the same, very unique texture. Having said that, if you have a large non-stick, or very well seasoned cast iron pan, this really isn't hard to pull off. Either way, I really hope you give this a try soon. Enjoy\! |
