Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
Mix graham cracker crumbs and melted butter together in a medium bowl until well combined.

This is an amazing cheesecake. I did a water bath by double foiling the springform pan and putting it in a cookie sheet with water. I also made sure not to over mix based on reviews.

Worth the effort
A keeper\!
I've been making this cheesecake for years now; love the results.Here's my method: I use a Pyrex round glass casserole dish & reduce baking temp by 25°F to 325°F.I use a probe in the oven to monitor the temperature while baking & find that my oven varies +/- 30°F from setpoint if left to cycle on its own, so I babysit the cheesecake while its baking & manually turn my oven on for 30 seconds when I see the temperature drop to 324°F which causes it to heat to 327°F; it then takes about 4 minutes to drop back to 324°F & I turn-on again for 30 seconds. So, I'm doing this about 14 times during the bake & consider the effort well worth the results. The 3°F temperature swing means my cheesecake is always smooth & creamy & uniform, and the Pyrex warms & cools more slowly & evenly than a metal baking dish.I lightly butter the inside of the casserole dish & lay a circle of parchment paper in the bottom; once it's cooled & set in the fridge overnight, I run a knife around the edge to loosen it, place clingwrap on top & invert the cheesecake; it pops right out & I set a cake platter on the bottom before turning it back over.No water bath needed.

Iâm not sure a 9â is appropriate size. Ovens I know vary in temperature and I use oven thermometers in two areas for a more accurate heating. How beat 50 minutes t seemed a better color and not burning smell. I followed exactly and Iâm sad I did the 1 hour. The recipe was easy to follow. I do have 2 questions that could be added to your recipe. Whole milk? heavy cream? And do it cover the cake while in the fridge? Thank you so much

Perfect recipe! So easy to follow and tastes just like something youâd get at a fancy bakery! I baked mine for an extra ten minutes for a little darker top (personal preference) but otherwise followed the directions exactly and it turned out fantastic.ETA: I did follow a reviewersâ tip and double lined the outside of my pan and filled my cookie sheet with a water bath while baking. Cooked on convection for total time of 70 minutes, turned off heat, and never opened oven until 10 hours later.

Iâve been making this recipe for years. Itâs absolutely amazing! Tip to keep it from cracking⌠wrap outside of cheesecake pan with tinfoil 2 layers criss cross, place in a rimmed cookie sheet and add water to the cookie sheet. Check half way through baking to make sure there is still water. Never had a crack with this method, perfect cheesecake every time! Oh and your vanilla matters! Donât use your normal grocery store brand, trust me on this one\!
