Directions
Gather all ingredients.
Stir yeast, sugar, and warm water together in a small bowl. Let stand until foamy, about 5 minutes.

Stir 2 cups of bread flour and salt together in the bowl of a stand mixer. Add yeast mixture and 2 tablespoons of olive oil; beat with dough hook on medium speed until dough is soft and slightly tacky, about 8 minutes, adding up to 3 tablespoons more flour, 1 tablespoon at a time, mixing after each addition.

OK with tweaks
As written it came out crumbly dry. I added tablespoons of water until it seemed normal. For flavor I later added 1 tsp of minced garlic and 1 tablespoon of Italian seasoning, but this photo shows it before those additions exactly as written, and I made it twice in a row completely just to get one part rising as I wanted a double crust for a stuffed Chicago style pizza. Both batches needed almost 3 more TBS of water. But even knowing that I’d make it again.

A keeper\!
Easy to follow
I let it rise for a half hour after mixing it and needing it, stretching a few times, covered in a bowl with a damp paper towel.I used a cast iron skillet and oiled it , placing in the oven set to 450 during the preheat, when oven got to temp, i worked the dough into the pan , placed a tbs of garlic butter on the top and baked for 8 minutes, removed and topped with fresh mozz, peperoni and cherry tomatoes.I baked and turned the pizza at 8 min intervals , because of the fresh Mozzarella i have use paper towel to pull up water that had separated.Once the pizza had reached its desired look and crispiness , i let it set for 5 minutes before cutting.Only thing I would change for the next time is using a larger skillet, but it was perfect if you want something in the realm of deep-dish/ pan pizza.

Added a little extra flour and garlic powder to the dough. Easy to spread out using fingertips on a floured countertop and then transferred to a cookie sheet with semolina where toppings added. From there, fit perfectly on the on a stone on the barbeque. Temperature preheated to 550°F. About 10 minutes cooking time.

Easy to follow
Worth the effort
This fough worked out well for me. I added a litle extra flour because the dough was way too sticky. It was an extra 1/4 cup of flour. I also added Italian seasoning blend to the dough recipe. It came out super nice and easy to manage. The dough when cooked came out crispy on the bottom and soft and tender inside. I will use this recipe again! Thank you.

2. Stir yeast, sugar, and warm water together in a small bowl. Let stand until foamy, about 5 minutes.
