beef chuck roast, cut into 1/2-inch thick strips
salt and pepper to taste

onion, sliced or diced

butter

garlic, minced

all-purpose flour

cup
white wine

cups
beef broth, divided
¾

creme fraiche

fresh chopped chives
salt and pepper to taste
Directions
Season beef generously with salt and pepper.
Heat oil in a large skillet over high heat until nearly smoking. Stir in beef; cook, stirring constantly, for 6 to 7 minutes, until liquid evaporates and meat browns.

Remove meat from the pan and set aside. Stir mushrooms, onions, and butter into the pan; cook and stir over medium heat until vegetables are lightly browned.

Add garlic and stir for 30 seconds. Stir in flour; cook for 1 to 2 minutes until incorporated. Stir in wine and 1 cup of broth, scraping the bottom of the pan to release any browned bits. Bring to a simmer and cook until the sauce thickens, about 3 to 4 minutes.

Return beef to the pan. Stir in remaining cup of broth; bring to a simmer and cook on low heat for about 1 hour, covered, until beef is tender and sauce is thick. Stir every 20 minutes.
Stir in crème fraîche. Stir in chives. Season with salt and pepper to taste.

Usually Chef John uses the highest quality ingredients, but this is like a stew with sour cream. I use thin strips of eye of round steak or sirloin steak or NY Strip steak cooked only to rare in butter in small batches, drain and retain the meat juices to add back to gravy. Put a strainer over a large measuring cup to catch meat juice. Then cook mushrooms, garlic and onion in butter, add flour and add meat juices and broth as needed to make gravy. Sometimes a spoon of horseradish too. Add back meat and gently warm. Remove from heat and blend in sour cream. To me, the trick is to cook your meat only to rare or medium rare to have it tender and juicy.

Instant top 5. I found Chef John this time last year and his mushroom gravy made the holiday season great. Today, Sunday inspiration, I came across Chef John again. Key: Get the Chuck (pot) roast beef. This beef cut when braised comes out soft and delicious. I am a big slow cooked pot roast guy. Against my instinct to avoid over cooking I finally realized it is best to cook pot roast low and long to make it fall-apart soft. I did not have time to make the Crème Fraîche and my local market did not have it. Instead I used mascarpone to avoid sour cream curdling. It worked. Next time I will plan ahead and make the super simple Crème Fraîche with heavy cream and cultured buttermilk. The picture shown is post-family-gobbling not much left... Excellent work Chef John\!

Very good! Cooked a bit longer than recipe called for as hubby cut roast in larger pieces. Lots of flavor! Served with buttered egg noodles and ‘everything’ garlic toast. Awesome\!

This stuff is really good! It has the perfect beef stroganoff flavor! I do not imbibe, so I do not include the wine; I just replace it with a little more beef broth. Once it is all added together, I let it simmer about two hours rather than one. The meat turns out very tender and tasty. I have experimented with both chuck roast and ribeye steaks and the chuck roast has a little better flavor and comes out a little more tender. I serve over egg noodles and it is a definite hit! Thank you for sharing, Chef John! You are very talented!\!

This was by far the best and simplest stroganoff recipe I have ever made with amazing results! I followed the recipe exactly as stated and only added a sprinkle of worcestershire sauce to flavor the meat. I will be making this again soon\!

- 2 pounds beef chuck roast, cut into 1/2-inch thick strips
- salt and pepper to taste
- 1 tablespoon vegetable oil
- 8 ounces sliced mushrooms
- ½ medium onion, sliced or diced
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 ½ tablespoons all-purpose flour
- ½ cup white wine
- 2 cups beef broth, divided
- ¾ cup creme fraiche
- 1 tablespoon fresh chopped chives
- salt and pepper to taste
## Directions
1. Season beef generously with salt and pepper.
2. Heat oil in a large skillet over high heat until nearly smoking. Stir in beef; cook, stirring constantly, for 6 to 7 minutes, until liquid evaporates and meat browns.

3. Remove meat from the pan and set aside. Stir mushrooms, onions, and butter into the pan; cook and stir over medium heat until vegetables are lightly browned.
