I use brown sugar instead of white making my own of course by mixing molasses with white sugar. This time (in pic) I sliced bananas on the top and sprinkled the top with a cinnamon sugar mix, they carmelized beautifully. I also grease the pan and dust it with cinnamon and sugar before pouring in the batter. Whenever I have overripe bananas I throw them in the freezer (skin and all) until I need to make this bread. When I'm ready to use them, I microwave them until I get this rich clear banana juice that I pour in the batter along with the very soft banana, which makes it amazing.
