How To Store And Reheat
If I have any leftovers, Iāll store my stroganoff and egg noodles (or rice or mashed potatoes) in separate airtight

. The ground beef stroganoff itself will stay fresh in the refrigerator for 3-4 days. To reheat, I warm the leftovers in the microwave or in a skillet over medium-high heat until heated through.Ā
I can also freeze this dish for
meal prep
, as long as I donāt add the sour cream (combine the ingredients as instructed, stopping just before adding the sour cream). Then, I let the mixture cool completely and transfer it to a freezer-safe airtight container. It will last frozen for about 1-2 months. To thaw the frozen stroganoff, I set the mixture in the fridge overnight. Then, Iāll start reheating it in a pan and complete the recipe as instructed. If the sauce has thickened past my liking, Iāll add a splash of beef broth to loosen it back up. If it becomes too watery for any reason, I let it simmer on the stove and thicken back up.

Prevent your screen from going dark
Add the oil to a
large skillet
over medium heat. Once the oil is hot, add the
ground beef

Brown the beef for about 5 minutes, breaking it up with a wooden spoon until itās about 80% browned. Itās OK for some of the beef to still be pink.Ā
Add the mushrooms, onions, garlic, salt, and pepper to the beef. Continue to cook, stirring occasionally, for another 5-7 minutes or until the onions are translucent and the mushrooms are cooked down.Ā
Sprinkle the flour over the
ground beef
and
sliced mushrooms
. Use a stirring spoon to mix it together.
Add the
Worcestershire sauce

. Stir until well combined.Ā
Increase the heat to medium-high and bring the mixture to a simmer for 3-4 minutes, or until the sauce thickens slightly.Ā
Remove the skillet from the heat and stir in the

. Let everything sit for 5-10 minutes in the skillet before serving. This time allows the sauce to thicken further.
Gently toss the beef and sauce with the

I make a vegetarian version of this using Beyond Meatās Plant-Based Steak Tips instead of ground real/fake meat, and itās one of our standard comfort-food dishes. I usually use powdered mushroom broth instead of the beef broth (sometimes other veggie stock.) I should try adding the mustard to it ā that sounds helpful.

By using ground beef instead of tenderloin or ribeye, Iāve created a more affordable, approachable take on classic beef stroganoff recipes. Itās quick and simple to make without sacrificing any of the rich and savory flavors. Additionally, this dish stores and reheats beautifully, making it a great meal prep option for busy weeks.

To make this dish gluten-free, Iāll use a 1:1 gluten-free flour in place of the all-purpose flour and swap the Worcestershire sauce for coconut aminos. Then, Iāll serve it over [**cauliflower rice**](https://therealfooddietitians.com/how-to-make-cauliflower-rice/), mashed potatoes, or my favorite gluten-free noodles.
To make this ground beef stroganoff recipe dairy-free, I swap the sour cream for dairy-free sour cream or a plant-based Greek yogurt. Besides that, I follow the directions as usual. I can hardly tell a difference in the taste\!

## Serving Options
I love serving this beef stroganoff over cooked egg noodles, [**cooked rice**](https://therealfooddietitians.com/instant-pot-jasmine-rice/), or [**mashed potatoes**](https://therealfooddietitians.com/instant-pot-mashed-potatoes/). If I want to take my plating skills up a notch, Iāll simply add some fresh parsley as a garnish to the top of the dish.
Then, to make it a well-rounded weeknight meal, Iāll pair it with side dishes like [**garlic roasted vegetables**](https://therealfooddietitians.com/garlic-roasted-vegetables/), [**green beans**](https://therealfooddietitians.com/roasted-green-beans/), or one of my favorite [**light and refreshing salads**](https://therealfooddietitians.com/summer-salads/).

## How To Store And Reheat
If I have any leftovers, Iāll store my stroganoff and egg noodles (or rice or mashed potatoes) in separate airtight [**meal prep containers**](https://therealfooddietitians.com/favorite-meal-prep-containers/). The ground beef stroganoff itself will stay fresh in the refrigerator for 3-4 days. To reheat, I warm the leftovers in the microwave or in a skillet over medium-high heat until heated through.
I can also freeze this dish for [**meal prep**](https://therealfooddietitians.com/a-guide-to-meal-prep/), as long as I donāt add the sour cream (combine the ingredients as instructed, stopping just before adding the sour cream). Then, I let the mixture cool completely and transfer it to a freezer-safe airtight container. It will last frozen for about 1-2 months. To thaw the frozen stroganoff, I set the mixture in the fridge overnight. Then, Iāll start reheating it in a pan and complete the recipe as instructed. If the sauce has thickened past my liking, Iāll add a splash of beef broth to loosen it back up. If it becomes too watery for any reason, I let it simmer on the stove and thicken back up.

Ground beef stroganoff is a creative variation of the traditional beef stroganoff, a French-influenced dish with Russian origins from the 1800s. The dish made its way to America in the 1920s and became popular post-WWII. The original recipe incorporated chuck roast, but ground beef was introduced as a more convenient and budget-friendly alternative.

1. Add the oil to a large skillet over medium heat. Once the oil is hot, add the ground beef.
2. Brown the beef for about 5 minutes, breaking it up with a wooden spoon until itās about 80% browned. Itās OK for some of the beef to still be pink.
3. Add the mushrooms, onions, garlic, salt, and pepper to the beef. Continue to cook, stirring occasionally, for another 5-7 minutes or until the onions are translucent and the mushrooms are cooked down.
4. Sprinkle the flour over the ground beef and sliced mushrooms. Use a stirring spoon to mix it together.
5. Add the Worcestershire sauce or coconut aminos, Dijon mustard, and beef broth. Stir until well combined.
