salt, to taste
pepper, to taste
3 tablespoons unsalted butter
3 cloves garlic
½ cup heavy cream
¼ cup parmesan cheese
1 lemon, juiced
2 cups fresh baby spinach
1 teaspoon dried thyme
1 cup chicken broth

Season chicken thighs with salt, pepper, and paprika.
Melt 2 Tbsp. butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown. Drain excess fat and set aside.
Melt 1 Tbsp. butter in the skillet. Add garlic, stir until fragrant, then add chicken broth, heavy cream, Parmesan, lemon juice, thyme, and stir. Bring to boil, then reduce heat to low.
Stir in spinach, simmer until spinach has wilted and the sauce has thickened.
Return chicken to the skillet. Bake at 400˚F (200˚C) for 25 minutes.

This was DELICIOUS, I added half a lemon more but because I used salted butter and I love lemon. My son LOVED it 🤤 super easy to make and pretty quick for how fancy it looks.

It was sooooo good! I kept the chicken fat in the pan before making the sauce and it was great. I don’t suggest draining it.

I added cayenne pepper with the dry ingredients, and also while sautéing the garlic I added onions and mushrooms! This was fantastic and a house favorite!!

I increased the sauce amount and sautéed mushrooms and onions with the garlic step. I deglazed the pan with white wine and let the mushrooms sweat out most of their liquid before adding the other liquid ingredients. I used a full clamshell of spinach and reduced the spinach water quite a bit (with the chicken broth and cream) before popping it in the oven.

If you added too much lemon juice just add some baking soda. It’ll lower the ph and make the dish a little less sour.

Delicious!!! I had skinless thighs and no cast iron and it still came out amazing!! I cooked in a regular pan and transferred to a oven safe dish and it came out perfect! Will definitely make again!

Super good great and easy recipe. The hardest part maybe was getting a good crust on the chicken. I added lemon pepper seasoning on the chicken for extra flavor. Family loved it!! I’ll add more spinach next time y’all know how spinach like to play tricks on us lol

It was sooooo good! I kept the chicken fat in the pan before making the sauce and it was great. I don’t suggest draining it.

I added cayenne pepper with the dry ingredients, and also while sautéing the garlic I added onions and mushrooms! This was fantastic and a house favorite!\!

I increased the sauce amount and sautéed mushrooms and onions with the garlic step. I deglazed the pan with white wine and let the mushrooms sweat out most of their liquid before adding the other liquid ingredients. I used a full clamshell of spinach and reduced the spinach water quite a bit (with the chicken broth and cream) before popping it in the oven.

If you added too much lemon juice just add some baking soda. It’ll lower the ph and make the dish a little less sour.

Delicious!!! I had skinless thighs and no cast iron and it still came out amazing!! I cooked in a regular pan and transferred to a oven safe dish and it came out perfect! Will definitely make again\!

Super good great and easy recipe. The hardest part maybe was getting a good crust on the chicken. I added lemon pepper seasoning on the chicken for extra flavor. Family loved it!! I’ll add more spinach next time y’all know how spinach like to play tricks on us lol

- 1 tablespoon paprika
- salt, to taste
- pepper, to taste
- 3 tablespoons unsalted butter
- 3 cloves garlic
- ½ cup heavy cream
- ¼ cup parmesan cheese
- 1 lemon, juiced
- 2 cups fresh baby spinach
- 1 teaspoon dried thyme
- 1 cup chicken broth

1. Season chicken thighs with salt, pepper, and paprika.
2. Melt 2 Tbsp. butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown. Drain excess fat and set aside.
3. Melt 1 Tbsp. butter in the skillet. Add garlic, stir until fragrant, then add chicken broth, heavy cream, Parmesan, lemon juice, thyme, and stir. Bring to boil, then reduce heat to low.
4. Stir in spinach, simmer until spinach has wilted and the sauce has thickened.
5. Return chicken to the skillet. Bake at 400˚F (200˚C) for 25 minutes.
