Creamy Tuscan Garlic Chicken, filled with all the flavors of the restaurant classic, but with a luxurious non dairy cream sauce. This Whole30 Tuscan Chicken is easy to make, and perfect for a family meal. Serve this Whole30 chicken dish over cauliflower rice or zoodles for a healthy, protein rich dinner.

How to Make Tuscan Chicken (Non-Dairy, with Almond Milk)
Once you try this easy chicken recipe, you’ll keep the ingredients on hand! Chicken breasts are browned, and then bathed in a luxurious non-dairy cream sauce, punctuated with Italian herbs, sun dried tomatoes, and spinach.
If you or your family members are sensitive to dairy, this version is for you.
I created a Whole30 approved version of Creamy Tuscan Chicken using almond milk and coconut milk to mimic the rich creaminess of the original. Not a touch of dairy or cheese needed!
What You’ll Need
4 boneless
chicken breasts
Onions
and
lots of fresh garlic
Sun dried tomatoes
(use my recipe to make your own, or buy to save time!
Herbs –
oregano, basil, and rosemary
. (Dried, or fresh if you have it in your garden!)
Chicken Broth
Unsweetened almond milk
Creamy
coconut milk
(the kind from the can, full fat!)
A touch of
lemon
juice
A few handfuls of
spinach
How to Make Creamy Chicken with an Almond Milk Sauce
Step 1:
Heat a skillet over medium heat. Drizzle olive oil in the skillet.
Step 2:
Add the chicken breasts, and generously season with salt and pepper.
Step 3:
Allow the chicken to cook until browned, about 10 minutes. Flip the chicken breasts, and cover the pan with a lid. Allow to continue cooking for about 10 minutes to cook the chicken throughout.
Step 4:
Remove chicken from skillet.
Step 5:
Add olive oil, and reduce heat to medium. Add garlic and onions, and sauté for 5 minutes.
Step 6:
Add sun dried tomatoes to the skillet, and season with salt, pepper, and Italian herbs.
Step 7:
Once the garlic and onions are fragrant, add chicken broth, and allow to reduce until nearly all liquid is gone.
Step 8:
Add almond milk and coconut milk, and bring to a low simmer. Add lemon juice, and season sauce with salt and pepper to taste.
Step 9:
Return chicken to pan, and allow the chicken to simmer with the sauce for about 5 minutes, until the sauce slightly thickens.
Step 10:
Serve the chicken with cream sauce spooned over the top.
How to Serve Creamy Garlic Tuscan Chicken
Over the past few months, I have made an effort to eat lower carb meals. I plan to share on this topic later, but while doing this, I connected with a lot of you who have asked about eating this way, but avoiding cooking a separate meal for your families.
This dish is perfect for that.
For a Low Carb Meal:
Zucchini noodles
(I use this
spiralizer
– it’s so easy to use!)
Cauliflower rice
(just break up some cauliflower florets, and give them a few pulses in a food processor – or better yet, pick up a package pre riced)
Roasted Broccoli
(just toss some in a bit of olive oil, salt and pepper, and broil for 5-7 minutes until charred around the edges)
For the Family, serve this with:
A pot of steamed rice or quinoa
Your family’s favorite pasta
Baked potatoes or
sweet potatoes

Over medium high heat, add olive oil to a skillet.
Add chicken, and season with salt and pepper.
Brown chicken on both sides, and then cover the pan and allow to cook through, about 15 minutes.
Remove chicken from skillet.
Add olive oil, and reduce heat to medium.
Add garlic and onions, and sauté for 5 minutes.
Add sun dried tomatoes to the skillet, and season with salt, pepper, and Italian herbs.
Once the garlic and onions are fragrant, add chicken broth, and allow to reduce until nearly all liquid is gone.
Add almond milk and coconut milk, and bring to a low simmer. Add lemon juice, and season sauce with salt and pepper to taste.
Return chicken to pan, and allow the chicken to simmer with the sauce for about 5 minutes, until the sauce slightly thickens.
Serve the chicken with cream sauce spooned over the top.

You can. It won’t be as rich or creamy since almond milk is so thin. Another idea is to soak 1/2 cup of cashews (overnight, or in boiling water for 30 minutes), and blend them with 1 cup of water until you have a thick cashew cream (no need to strain it – just use out of the blender). The cashew cream would keep the sauce richer, which is what makes this sauce so good. You can also go the dairy route and just use milk and half and half, if dairy is a part of your diet.

I don’t see why not! I would brown the chicken in the skillet, add the chicken and sauce to the slow cooker, and cook on low for 3-4 hours — or until the chicken is soft enough for your baby. Enjoy\!

Do you need to make it dairy free? It would work with all coconut milk, I just recommend buying light coconut milk or just adding some chicken broth in place of the almond milk. All full-fat coconut milk will give it a definitely coconut flavor, which is why I use almond milk too, so the flavor is really light and it just adds a nice thickness. I haven’t tried it, but unsweetened cashew or oat milk would most likely work if you need to keep it dairy free.

The flavor of this recipe was really wonderful. I just want to highly suggest that you either buy thin sliced chicken breast or pound your chicken breasts very thin. My husband followed the recipe last night without pounding the chicken breasts and they ended up chewy and dry. I believe had he pounded it, the dish would have been perfect.

Flavor of this dish is absolutely amazing. I used lime juice because I was out of lemon. My only issue was that it didn’t thicken as I expected like a regular cream/milk based sauce. I chose this recipe for my brother who cannot have regular milk dairy. I did have to double it for the size of my family. I will try making it again though.

I am so glad you liked it! You can cook it down to thicken the sauce but it is thinner than a cream based sauce.

## How to Make Tuscan Chicken (Non-Dairy, with Almond Milk)
Once you try this easy chicken recipe, you’ll keep the ingredients on hand! Chicken breasts are browned, and then bathed in a luxurious non-dairy cream sauce, punctuated with Italian herbs, sun dried tomatoes, and spinach.
**If you or your family members are sensitive to dairy, this version is for you.**
I created a Whole30 approved version of Creamy Tuscan Chicken using almond milk and coconut milk to mimic the rich creaminess of the original. Not a touch of dairy or cheese needed\!
## **What You’ll Need**
- 4 boneless **chicken breasts**
- **Onions** and ***lots of fresh garlic***
- [**Sun dried tomatoes**](https://sunkissedkitchen.com/sun-dried-tomatoes/) (use my recipe to make your own, or buy to save time\!
- Herbs – **oregano, basil, and rosemary**. (Dried, or fresh if you have it in your garden!)
- **Chicken Broth**
- **Unsweetened almond milk**
- Creamy **coconut milk** (the kind from the can, full fat!)
- A touch of **lemon** juice
- A few handfuls of **spinach**

## How to Make Creamy Chicken with an Almond Milk Sauce
**Step 1:** Heat a skillet over medium heat. Drizzle olive oil in the skillet.
**Step 2:** Add the chicken breasts, and generously season with salt and pepper.
**Step 3:** Allow the chicken to cook until browned, about 10 minutes. Flip the chicken breasts, and cover the pan with a lid. Allow to continue cooking for about 10 minutes to cook the chicken throughout.
**Step 4:** Remove chicken from skillet.
**Step 5:** Add olive oil, and reduce heat to medium. Add garlic and onions, and sauté for 5 minutes.
**Step 6:** Add sun dried tomatoes to the skillet, and season with salt, pepper, and Italian herbs.
**Step 7:** Once the garlic and onions are fragrant, add chicken broth, and allow to reduce until nearly all liquid is gone.
**Step 8:** Add almond milk and coconut milk, and bring to a low simmer. Add lemon juice, and season sauce with salt and pepper to taste.

**Step 9:** Return chicken to pan, and allow the chicken to simmer with the sauce for about 5 minutes, until the sauce slightly thickens.

**Step 10:** Serve the chicken with cream sauce spooned over the top.
## How to Serve Creamy Garlic Tuscan Chicken
Over the past few months, I have made an effort to eat lower carb meals. I plan to share on this topic later, but while doing this, I connected with a lot of you who have asked about eating this way, but avoiding cooking a separate meal for your families.
This dish is perfect for that.
**For a Low Carb Meal:**
- **Zucchini noodles** (I use this [spiralizer](https://www.amazon.com/gp/product/B01C2TT2H8/ref=as_li_qf_asin_il_tl?ie=UTF8&tag=vitaminsunshi-20&creative=9325&linkCode=as2&creativeASIN=B01C2TT2H8&linkId=29f55e67de8be4b40ad5b9e646bf6d6e) – it’s so easy to use!)
- **[Cauliflower rice](https://blissfullylowcarb.com/cauliflower-rice/)** (just break up some cauliflower florets, and give them a few pulses in a food processor – or better yet, pick up a package pre riced)
- **Roasted Broccoli** (just toss some in a bit of olive oil, salt and pepper, and broil for 5-7 minutes until charred around the edges)
**For the Family, serve this with:**
- A pot of steamed rice or quinoa
- Your family’s favorite pasta

#### Creamy Garlic Sauce
- â–˘
1/2 tablespoon olive oil
- â–˘
1 onion diced
- â–˘
4 cloves garlic thinly sliced
- â–˘
1/2 cup sun dried tomatoes chopped
- â–˘
1 teaspoon dried basil
- â–˘
1/2 teaspoon dried oregano
- â–˘
1/2 teaspoon dried rosemary
- â–˘
1/2 cup chicken broth
- â–˘
3/4 cup almond milk
- â–˘
1/2 cup [coconut milk](https://www.amazon.com/gp/product/B00DUMDNTU/ref=as_li_qf_asin_il_tl?ie=UTF8&tag=vitaminsunshi-20&creative=9325&linkCode=as2&creativeASIN=B00DUMDNTU&linkId=4f2827758d40d70ed92aadbe940de102)

1 teaspoon lemon juice
- â–˘
salt and pepper to taste
- Over medium high heat, add olive oil to a skillet.
- Add chicken, and season with salt and pepper.
- Brown chicken on both sides, and then cover the pan and allow to cook through, about 15 minutes.
- Remove chicken from skillet.
- Add olive oil, and reduce heat to medium.
- Add garlic and onions, and sauté for 5 minutes.
- Add sun dried tomatoes to the skillet, and season with salt, pepper, and Italian herbs.
- Once the garlic and onions are fragrant, add chicken broth, and allow to reduce until nearly all liquid is gone.
- Add almond milk and coconut milk, and bring to a low simmer. Add lemon juice, and season sauce with salt and pepper to taste.
- Return chicken to pan, and allow the chicken to simmer with the sauce for about 5 minutes, until the sauce slightly thickens.
- Serve the chicken with cream sauce spooned over the top.
