* last week ā no, I cannot believe I get to utter sentences like that so casually, either, pinch me ā and it was really, truly, and surprisingly spring. The magnolia trees at the
Jardin du Palais Royal
supplied us with a lace curtain of fluttering pink shadows, the daffodils and hyacinth were popping up from the ground like theyād missed us, and everyone was outside and stayed out until after midnight and this energy climbed inside me, evicted all of the seasonal malaise (turned out I was just cold!), and I did my best to bring all of this warmth and joy back to NYC with me. And despite the fact that my grouchy (sorry, āweatheredā) friends tried to warn me that we were experiencing a āfalse springā and ādonāt fall for it,ā la la la, I said, it is spring in my heart now ā and in my kitchen, and busted out a warm weather salad. Which is to say: Iām sorry, this sudden cold spell might be my fault.
Longtime readers might recognize this as an update to
one of the earliest salads on this site
. The black bean confetti salad has never left my repertoire, but these days, I love hitting it with more more more: avocado, radishes, and just so much lime juice. Iāve traded cumin for tajĆn (or your favorite chili powder) and made peace with cilantro. And these days, I cannot resist making it with
one of these chopper gadgets
(which, funny enough, I also owned in 2006 but rarely used then; perhaps I had more free time?) for geometrically pleasing cubes of vegetable confetti.
I love the way this straddles the line between party snack and lunch. I brought it to a friendās tamale-making party last fall and felt a dorky maternal pride, knowing Iād sneakily provided us with vegetables, protein, and fiber (to go with our giant pot of queso, for balance and stuff). I make too much and eat it for lunch when I think I donāt have time for lunch. And this week, we piled it on simple quesadillas for dinner. Is there anything this salad cannot do? Bring spring back, perhaps, but do know itās trying its best.

Black Bean Confetti Salad 2.0
This is a zhuzh-ed up edition of my
2007 Black Bean Confetti Salad
ā with added avocado, radishes, cilantro, more lime, and more seasoning. Look for avocados that feel like a firm rubber ball; they hold up well. We add them last so they donāt get very banged up. We scoop it up with tortilla chips.
2 15-ounce cans black beans, drained and rinsed
3 bell peppers, a mix of colors, diced
1 to 2 jalapeƱos, chopped small, to taste
1/4 large or half a medium white onion, chopped small
A few radishes, chopped small (shown here with a watermelon radish)
4 tablespoons (60 ml) olive oil
Juice of 1 to 2 limes, to taste
Kosher salt
Chili powder or
tajĆn
(a blend of chili powder, lime, and salt)
About 1/2 cup (a big handful) fresh cilantro, chopped
2 firm-ripe avocados, peeled and diced
Tortilla chips for serving (if you wish)
Combine black beans, bell peppers, jalapeƱos, onion, and radishes in a large bowl. Dress with olive oil, the juice of one lime, 1 teaspoon kosher salt, and chili powder or tajĆn to taste. Add cilantro and avocado and mix gently. Taste the mixture; I usually like mine with more lime (up to 1 lime more of juice) and salt (about a half-teaspoon more). Eat right away, scooping it up with tortilla chips. Leftovers keep a few days in the fridge.

I donāt use it frequently but itās holding up just well. I love it for certain salads (like a tomato-cucumber salad, salade olivier, some salsas). I broke the one I had in 2006. The one I bought in 2020 would get stuck when using the smaller grid, which I hadnāt realized because I so rarely used the size. This one is working great for all things. We put it in the dishwasher. Itās not hard to clean at all. Just be careful touching the grids. Theyāre very sharp.

I make this salad so often that most of my friends refer to it as āLoraās saladā. Itās so good and endlessly adaptable to whatever Iām serving and however much I need of it. A true Smitten Kitchen classic\!

My avocados were too ripe, so I made a side of guac instead.
This salad is so so adaptable!! I may add a can of whole kernel corn and(or) chopped mango next time! Beyond delicious.

Absolutely. Iām not partnered with Staub in EU (the braisers have been available there the whole time, my partnership was to bring them back to the US and Canada) so you wonāt see the co-branding but itās the same pot. They do have a few sizes of braisers. The one Iām fixated on is 4 quarts and 28cm across.

!!! This comment was such a delight/joy to read. You should be be able to find the 4-quart Staub braiser in Paris (sold there as ā28 cm, Sauteuse Chisteraā) in some cookware stores. I am not partnered with Staub outside the US/Canada on the braiser (no bad reason; it was simply always for sale there, my partnership was me nagging them to bring it back to the US). I know we picked one up for a local friend at a cookware store when I was in Paris a few weeks ago. You might call around and see where itās in stock.

I made this salad for my work lunch almost every day for at least five years, usually plopping a pike of it on a bed of spinach or greens and adding feta ā but it is one of those lovely recipes that is infinitely variable. Avocado of course, but one of the but happenstance additions was leftover roasted potatoes. Anyway, I am intrigued to see and old pal get a makeover and will try it out\!

I just made a version of this with what I had on hand! 2 bell peppers, a can of chickpeas and a can of corn, pickled hot & sweet jalapeƱos, cumin and chili powder, lime, olive oil, salt and pepper, cilantro and avocado. Delicious! Side note, your comment about the veggie chopper is funny to me bc to me it feels way more cumbersome to get the chopper out, assemble, then clean it afterwards ā and I still have to use a knife to core the pepper / cut open the avocado etc.  just rather chop everything with a single kitchen tool\!

So happy for the chopper talk! I love mine, but use it mostly for chopping onions (I canāt get them diced small enough before my eyes start stinging and watering and Iām ruined for the next several hours.)
My first lasted me several years before the blades dulled, and unfortunately, they donāt sell replacement blades. So, now Iām on \#2, no regrets\!

I canāt wait to make this. When I first saw the photos I thought there were cubes of Pepper Jack cheese but with closer inspection I realized I was looking at the light part of cubes of avocado and with the dressing and Tajin sticking to them it made it look like PJ cheese. I love this salad. So versatile. Watermelon radish is a new idea for me, Iāll try growing some this spring. Thanks! My version usually has black beans (honestly, any variety works) and pepper confetti and adds jalapeno, cumin, lime juice & zest, garlic, tomatoes. And if the crowd includes meat-eaters, bacon. I made this yesterday for work lunches for the rest of the week. Came here to comment as I ate, coz this tastes ridiculously good for something that looks so simple. Made it using a similar chopper (smaller dice for everything but the avocado) and it took about 20 minutes. I didnāt read the note about adding avocado at the end, so it got a little battered. Still delicious. I got about 6 medium servings out of this, so will dial up to 3 avocados next time and try equal amounts to each serving, the creaminess really makes this salad pop.
I used parsley instead of cilantro and pumpkin seeds for crunch, worked very well for a lunchbox salad.
Side note: would love a ālunchboxā tag to search for recipes that keep and pack well.

The magnolia trees at the [Jardin du Palais Royal](https://share.google/4X7G54up6IAfiy1aK) supplied us with a lace curtain of fluttering pink shadows, the daffodils and hyacinth were popping up from the ground like theyād missed us, and everyone was outside and stayed out until after midnight and this energy climbed inside me, evicted all of the seasonal malaise (turned out I was just cold!), and I did my best to bring all of this warmth and joy back to NYC with me. And despite the fact that my grouchy (sorry, āweatheredā) friends tried to warn me that we were experiencing a āfalse springā and ādonāt fall for it,ā la la la, I said, it is spring in my heart now ā and in my kitchen, and busted out a warm weather salad. Which is to say: Iām sorry, this sudden cold spell might be my fault.


Longtime readers might recognize this as an update to [one of the earliest salads on this site](https://smittenkitchen.com/2007/04/tabula-beana/). The black bean confetti salad has never left my repertoire, but these days, I love hitting it with more more more: avocado, radishes, and just so much lime juice. Iāve traded cumin for tajĆn (or your favorite chili powder) and made peace with cilantro. And these days, I cannot resist making it with [one of these chopper gadgets](https://amzn.to/4uoVygv) (which, funny enough, I also owned in 2006 but rarely used then; perhaps I had more free time?) for geometrically pleasing cubes of vegetable confetti.


I love the way this straddles the line between party snack and lunch. I brought it to a friendās tamale-making party last fall and felt a dorky maternal pride, knowing Iād sneakily provided us with vegetables, protein, and fiber (to go with our giant pot of queso, for balance and stuff). I make too much and eat it for lunch when I think I donāt have time for lunch. And this week, we piled it on simple quesadillas for dinner. Is there anything this salad cannot do? Bring spring back, perhaps, but do know itās trying its best.

### Black Bean Confetti Salad 2.0
This is a zhuzh-ed up edition of my [2007 Black Bean Confetti Salad](https://smittenkitchen.com/2007/04/tabula-beana/) ā with added avocado, radishes, cilantro, more lime, and more seasoning. Look for avocados that feel like a firm rubber ball; they hold up well. We add them last so they donāt get very banged up. We scoop it up with tortilla chips.
- 2 15-ounce cans black beans, drained and rinsed
- 3 bell peppers, a mix of colors, diced
- 1 to 2 jalapeƱos, chopped small, to taste
- 1/4 large or half a medium white onion, chopped small
- A few radishes, chopped small (shown here with a watermelon radish)
- 4 tablespoons (60 ml) olive oil
- Juice of 1 to 2 limes, to taste
- Kosher salt
- Chili powder or [tajĆn](https://amzn.to/4uqKXSh) (a blend of chili powder, lime, and salt)
- About 1/2 cup (a big handful) fresh cilantro, chopped
- 2 firm-ripe avocados, peeled and diced
- Tortilla chips for serving (if you wish)
Combine black beans, bell peppers, jalapeƱos, onion, and radishes in a large bowl. Dress with olive oil, the juice of one lime, 1 teaspoon kosher salt, and chili powder or tajĆn to taste. Add cilantro and avocado and mix gently. Taste the mixture; I usually like mine with more lime (up to 1 lime more of juice) and salt (about a half-teaspoon more). Eat right away, scooping it up with tortilla chips. Leftovers keep a few days in the fridge.
