There are 2 critical factors for making beef stroganoff correctly: The Beef –  Ensure you are searing quickly over high heat so the beef doesn’t steam co ok, and use high-quality beef so it doesn’t end up chewy (see recommendations below). Getting the Sauce Right – the correct proportions of sauce ingredients for a balanced sauce that makes the beef really shine. I suggest you make the sauce as written before experimenting. What are the Best Cuts of Beef for Stroganoff? This recipe relies on a quick sear (1 minute per side), so a high-quality, tender steak is critical for the best results. A poor-quality steak will be chewy and tough. My old Russian Cookbook (circa 1990) recommends a filet mignon but it also works very well with these less expensive cuts: Top Sirloin (be sure it says “TOP sirloin”) Boneless Ribeye steak Beef Tenderloin Filet Mignon tips If you are looking for a less expensive alternative, some have reported good results using ground chuck beef. What is Stroganoff Sauce Made of? Although this recipe calls for a high-quality steak, stroganoff sauce has humble ingredients that produce rich and memorable flavor. The original sauce has been modified as it has traveled the world. Some have added wine (like my slow cooker stroganoff ) and a variety of seasonings, but the base of a good stroganoff sauce is simple: Aromatics – Onion and garlic add depth of flavor Mushrooms – these can be optional, but they add great earthy flavor and bulk up the stroganoff Broth – I use beef stock , but chicken broth would work in a pinch Whipping Cream – use heavy whipping cream for a creamy base Sour Cream – regular full-fat is best, adds a slight tang Mustard – I prefer grey poupon to add complexity Worcestershire Sauce – we add it for a hint of sweetness and umami How to Serve Beef Stroganoff Beef stroganoff is packed with flavor from it’s creamy mushroom sauce so pair it with simple grains or starches that won’t compete with the sauce, such as: Egg noodles, lightly buttered (our favorite!) Homemade Pasta – so good over freshly cooked noodles Creamy mashed potatoes Steamy white rice Buckwheat Kasha Homemade Gnocchi Who Invented Beef Stroganoff? Beef Stroganoff was invented in Russia in the early 1800’s. Count Stroganoff was a dignitary in the court of Alexander III. Count Stroganoff’s chef (who was likely French), created the dish and named it after Stroganoff. I found a picture of Count Pavel Stroganoff (handsome fella!), but I wish I could find the chef as well. The earliest known recorded recipe was published in this Russian c ookbook first published in 1871. I don’t even like mushrooms! The recipe itself is pretty hard to mess up and very easy to make adjustments to if need (I didn’t have enough fresh mushrooms so I used a can of mushroom soup, I also didn’t make enough food but just adding more cream fixed that and still tasted amazingg). It is a very easy recipe even for somewhat beginners though I would be careful if your a beginner specifically because of the price of that meat [Reply](https://natashaskitchen.com/beef-stroganoff/#comment-1137784) - NatashasKitchen.com April 3, 2026 I’m so happy to hear that, Hannah! [Reply](https://natashaskitchen.com/beef-stroganoff/#comment-1137500) - Shelby Buschmann March 31, 2026 I thought the sear was bland. I added thyme and additional garlic to the searing oil, eliminating the salt (it’s in the broth). I used nonfat yogurt instead of whipping cream, and amped the parsley. I also used dill weed and finished with horseradish. These are staples in Eastern European cuisine, and the recipe doesn’t really reflect that. But I always look forward to seeing your recipes [Reply](https://natashaskitchen.com/beef-stroganoff/#comment-1137455) - ![Natasha](https://natashaskitchen.com/wp-content/themes/natashas-kitchen/images/natasha-comment.jpg) [Natasha Kravchuk](https://natashaskitchen.com/natasha-kravchuk/) April 1, 2026 Hi Shelby, this isn’t normally bland unless it’s under-seasoned, but your changes would significantly change the flavor of the beef stroganoff. I do love dill for Easter European cuisine and that sounds like a tasty addition. There are 2 critical factors for making beef stroganoff correctly: - **The Beef –** Ensure you are searing quickly over high heat so the beef doesn’t steam cook, and use high-quality beef so it doesn’t end up chewy (see recommendations below). - **Getting the Sauce Right** – the correct proportions of sauce ingredients for a balanced sauce that makes the beef really shine. I suggest you make the sauce as written before experimenting. ![Beef stroganoff recipe up close in pan](https://natashaskitchen.com/wp-content/uploads/2019/04/Beef-Stroganoff-7.jpg) ## What are the Best Cuts of Beef for Stroganoff? This recipe relies on a quick sear (1 minute per side), so a high-quality, tender steak is critical for the best results. A poor-quality steak will be chewy and tough. My old [Russian Cookbook](https://amzn.to/3C40eSR) (circa 1990) recommends a filet mignon but it also works very well with these less expensive cuts: - Top Sirloin (be sure it says “TOP sirloin”) - Boneless Ribeye steak - [Beef Tenderloin](https://natashaskitchen.com/roasted-beef-tenderloin/) - Filet Mignon tips - If you are looking for a less expensive alternative, some have reported good results using ground chuck beef. ![Top sirloin steak beef thinly sliced](https://natashaskitchen.com/wp-content/uploads/2019/04/Beef-Stroganoff-2.jpg) ## What is Stroganoff Sauce Made of? Although this recipe calls for a high-quality steak, stroganoff sauce has humble ingredients that produce rich and memorable flavor. The original sauce has been modified as it has traveled the world. Some have added wine (like my [slow cooker stroganoff](https://natashaskitchen.com/slow-cooked-beef-stroganoff/)) and a variety of seasonings, but the base of a good stroganoff sauce is simple: - **Aromatics** – Onion and garlic add depth of flavor - **Mushrooms** – these can be optional, but they add great earthy flavor and bulk up the stroganoff - **Broth** – I use [beef stock](https://natashaskitchen.com/beef-stock/), but chicken broth would work in a pinch - **Whipping Cream** – use heavy whipping cream for a creamy base - **Sour Cream** – regular full-fat is best, adds a slight tang - **Mustard** – I prefer grey poupon to add complexity - **Worcestershire Sauce** – we add it for a hint of sweetness and umami ![Ingredients for stroganoff with beef, mushrooms, broth, mustard, sour cream, whiping cream](https://natashaskitchen.com/wp-content/uploads/2019/04/Beef-Stroganoff.jpg) ## How to Serve Beef Stroganoff Beef stroganoff is packed with flavor from it’s creamy mushroom sauce so pair it with simple grains or starches that won’t compete with the sauce, such as: - Egg noodles, lightly buttered (our favorite!) - [Homemade Pasta](https://natashaskitchen.com/homemade-pasta-recipe/) – so good over freshly cooked noodles - [Creamy mashed potatoes](https://natashaskitchen.com/creamy-mashed-potatoes-recipe/) - Steamy [white rice](https://natashaskitchen.com/how-to-cook-rice/) - [Buckwheat](https://natashaskitchen.com/how-to-cook-buckwheat-kasha/) Kasha - [Homemade Gnocchi](https://natashaskitchen.com/easy-gnocchi-recipe/) ![Beef stroganoff with serving spoon garnished with chives](https://natashaskitchen.com/wp-content/uploads/2019/04/Beef-Stroganoff-3.jpg) ## Who Invented Beef Stroganoff? Beef Stroganoff was invented in Russia in the early 1800’s. Count Stroganoff was a dignitary in the court of Alexander III. Count Stroganoff’s chef (who was likely French), created the dish and named it after Stroganoff. I found a picture of [Count Pavel Stroganoff](https://www.bonappetit.com/entertaining-style/trends-news/article/origin-of-beef-stroganoff) (handsome fella!), but I wish I could find the chef as well. The earliest known recorded recipe was published in this [Russian c](https://amzn.to/4ha7Lyp)[ookbook](https://amzn.to/2IKPpaq) first published in 1871. ![Beef and mushrooms in creamy stroganoff sauce garnished with green onion](https://natashaskitchen.com/wp-content/uploads/2019/04/Beef-Stroganoff-4.jpg) ## More Easy Dinner Recipes to Try - [Beef and Broccoli Stir Fry](https://natashaskitchen.com/beef-and-broccoli/) – easy, one-pan - [Beef Burritos](https://natashaskitchen.com/beef-burrito-recipe/) – make-ahead family favorite - [Chicken Fricassee](https://natashaskitchen.com/chicken-fricassee/) – a timeless French classic - [Lasagna](https://natashaskitchen.com/lasagna-recipe/) – beefy, saucy, cheesy and delicious - [Chicken Pesto Pasta](https://natashaskitchen.com/chicken-pesto-pasta/) – in a pesto cream sauce - [Beef Chili](https://natashaskitchen.com/beef-chili-recipe/) – quick and so satisfying - [Creamy Shrimp Pasta](https://natashaskitchen.com/creamy-shrimp-pasta-recipe/) – restaurant quality ## Beef Stroganoff Recipe 4\.97 from 1898 votes Author: Natasha of NatashasKitchen.com ![Beef stroganoff recipe in pan](https://natashaskitchen.com/wp-content/uploads/2019/04/Beef-Stroganoff-6-160x160.jpg) Classic Beef Stroganoff with tender strips of beef in an indulgent creamy mushroom sauce, served over noodles. Add 2 Tbsp oil and once oil is very hot, add thinly sliced beef strips in a single layer, cooking 1 minute per side without stirring. Cook until just browned and no longer red. Sear beef in 2 batches so you don't overcrowd the pan. Remove beef to a plate and cover to keep warm. - Add 2 Tbsp butter, chopped onion and sliced mushrooms. Sautee 6-8 minutes or until liquid has evaporated and onions and mushrooms are soft and lightly browned. - Add 1 minced garlic clove and sautee 1 minute until fragrant. Add 1 Tbsp flour and sautee another minute stirring constantly. - Pour in 1 cups beef broth, scraping any bits from the bottom of the pan then add 3/4 cup whipping cream and simmer another 1 to 2 minutes or until slightly thickened. - Stir a few Tablespoons of the sauce into 1/4 cup of sour cream to temper it so the sour cream doesn’t curdle then add it to the pan while stirring constantly. - Stir in 1 Tbsp Worcestershire, 1/2 tsp dijon mustard, and season with 1/2 tsp salt and 1/4 tsp pepper, or season to taste and continue simmering until sauce is creamy. Add beef with any accumulated juices back to the pan and bring just to a simmer or until beef is heated through. \*For best results, be sure your meat is either: Top Sirloin, Boneless Ribeye steak, Beef Tenderloin (Filet Mignon), or Filet Mignon tips. Thinly slice against the grain to ensure tender bites of beef. 461kcal Calories9g Carbs30g Protein34g Fat17g Saturated Fat2g Polyunsaturated Fat13g Monounsaturated Fat0\.2g Trans Fat137mg Cholesterol555mg Sodium915mg Potassium1g Fiber3g Sugar883IU Vitamin A2mg Vitamin C97mg Calcium3mg Iron - [Full Nutrition Label](https://natashaskitchen.com/beef-stroganoff/) - [Nutrition Disclosure](https://natashaskitchen.com/about/terms-and-conditions/#nutrition) Nutrition Facts Beef Stroganoff Recipe Amount per Serving Calories % Daily Value\* Fat 34 g 52 % Saturated Fat 17 g 106 % Trans Fat 0\.2 g Polyunsaturated Fat 2 g Monounsaturated Fat 13 g Cholesterol 137 mg 46 % Sodium 555 mg 24 % Potassium 915 mg 26 % Carbohydrates 9 g 3 % Fiber 1 g 4 % Sugar 3 g 3 % Protein 30 g 60 % Vitamin A 883 IU 18 % Vitamin C 2 mg 2 % Calcium 97 mg 10 % Iron 3 mg 17 % \* Percent Daily Values are based on a 2000 calorie diet.
