Youâve probably seen the viral Greek yogurt cheesecake floating around lately. I loved the simplicity of the idea, but of course I couldnât resist putting my own spin on it.
This version blends passionfruit with farmerâs cheese (for extra protein and structure), dairy-free Greek yogurt, and a little honey or maple syrup. Instead of Biscoff cookies, I use Simple Mills Lemon Sweet Thins, which soften overnight and turn the whole thing into a bright, creamy, scoopable icebox cheesecake.
Itâs tangy, lightly sweet, and unbelievably refreshing.

Iâm a little embarrassed to admit this, but I only ate a real passionfruit for the first time last year. After we moved into our new neighborhood, Kezia started riding her bike around and collecting the fallen ones from vines that had grown over neighborsâ fences. I had eaten passionfruit-flavored desserts before, but had never actually cut one open myself.
We quickly learned that the more wrinkled they become, the sweeter they are. Soon I was adding them to everything and made batch after batch of my lemon curd with passionfruit juice last summer. Theyâre not quite back in season here yet, but I found a great bag of frozen passionfruit at Sprouts, which works perfectly in this recipe.
I was first introduced to farmerâs cheese years ago when I was following the SCD and GAPS gut-healing protocols. Those approaches allow certain cultured dairy foods because the fermentation process breaks down much of the lactose and introduces beneficial bacteria, making them easier to digest for many people working to heal the gut. Farmerâs cheese is cultured milk that drains off much of the whey.
I used it in the sauce in this recent Buffalo Chicken Burger reel too!
I love using it in recipes like this because it blends incredibly smooth while adding structure,
probiotics
and
protein
. Itâs also a lot more mild in taste, and
WAY lower in lactose
than cottage cheese.
The protein helps the cheesecake thicken and set overnight, while the tangy flavor and live cultures pair beautifully with the bright passionfruit. Itâs a simple ingredient that quietly does a lot of work here.
And the best part of this recipe? You mix it in five minutes and let the refrigerator do the rest.

4 8-ounce jars
INGREDIENTS
1 cup farmerâs cheese (226 g)
1 cup dairy-free Greek yogurt (240 g)
½ cup thawed frozen passionfruit pulp (120 g)
Âź cup honey or maple syrup (85 g)
2 teaspoons fresh lemon juice (8 g)
½ teaspoon vanilla extract (2 g)
1/8 teaspoon fine sea salt
6 to 8 Simple Mills Lemon Sweet Thins per jar
METHOD
Place the thawed passionfruit in a blender and purĂŠe until smooth.
Add the farmerâs cheese, dairy-free Greek yogurt, honey or maple syrup, lemon juice, vanilla extract, and salt. Blend until completely smooth and creamy, scraping down the sides of the blender as needed.
Divide the mixture between 4 jars or small bowls.
Gently press cookies 6 to 8 vertically into the mixture of each jar.
Cover and refrigerate overnight, or at least 10 hours, until the filling has thickened and the cookies have softened. Serve chilled with additional crushed cookies on top, if desired.
