Combine eggs and butter.
Crack your 5 cold eggs directly into a
cold
non-stick saucepan or skillet. Add the butter (cut into pats) right on top of the eggs.
Do not whisk yet
and do not season!
Start the heat.
Place the pan over
medium-high heat
. Immediately start stirring with a rubber or silicone spatula, making sure to scrape the bottom and sides of the pan continuously so the eggs don't stick.
The "On and Off" Technique.
As the mixture begins to thicken, remove the pan from the heat for about 30 seconds while
continuing to stir
. Return it to the heat for another 30 seconds. Repeat this "on and off" cycle until the eggs are soft, creamy, and curds begin to form.
Stir in the cream.
When the eggs are just about set (they should still look slightly moist), remove the pan from the heat permanently. Quickly stir in the
sour cream
(or crème fraîche) and optional chives. This cools the eggs down to stop the cooking process and adds richness.
Season.
Now that the eggs are cooked, season with
salt & pepper
to taste. (Adding salt earlier can break down the eggs and make them watery, additionally if you pepper too early it will turn the eggs slightly grey).
Serve.
Give it one last stir to combine and serve immediately, preferably on a slice of thick, toasted sourdough.

I love these rich and creamy scrambled eggs. Try with less butter (one tablespoon will do) and replace the sour cream with 0% fat plain greek yogurt. I prefer a bit more salt and pepper at the very end.

1. **Combine eggs and butter.** Crack your 5 cold eggs directly into a **cold** non-stick saucepan or skillet. Add the butter (cut into pats) right on top of the eggs. **Do not whisk yet** and do not season\!
2. **Start the heat.** Place the pan over **medium-high heat**. Immediately start stirring with a rubber or silicone spatula, making sure to scrape the bottom and sides of the pan continuously so the eggs don't stick.
3. **The "On and Off" Technique.** As the mixture begins to thicken, remove the pan from the heat for about 30 seconds while **continuing to stir**. Return it to the heat for another 30 seconds. Repeat this "on and off" cycle until the eggs are soft, creamy, and curds begin to form.
4. **Stir in the cream.** When the eggs are just about set (they should still look slightly moist), remove the pan from the heat permanently. Quickly stir in the **sour cream** (or crème fraîche) and optional chives. This cools the eggs down to stop the cooking process and adds richness.
5. **Season.** Now that the eggs are cooked, season with **salt & pepper** to taste. (Adding salt earlier can break down the eggs and make them watery, additionally if you pepper too early it will turn the eggs slightly grey).
